Grilled Vegetables & Bacon Packet
My husband is my grill master. This is his recipe and he made it with the peppers he picked fresh from our garden. These are very easy to make and you can throw them on your grill while you are cooking the rest of your meal. The best part about making these, next to the taste of course, is that there is no pan to clean!
Ingredients
Spray two large pieces of
heavy foil with cooking oil.
Place the onions, peppers and bacon onto
the center of one sprayed sheet of foil.
Add the potatoes.
Salt and pepper to taste and add the butter.
Place the second sheet of foil, sprayed
side down, on top of the vegetables.
Pack the top sheet of foil around the
vegetables by gently pushing the foil
down around them with your hands.
Roll both pieces of foil up and tightly
together on one side until you reach the food.
Do the same to the other side,
rolling in the same upward direction.
Continue with the other two sides
rolling in the same direction, upward,
completely sealing the top of the packet.
Place the foil packet on a medium-low
preheated grill, top side down for
10 minutes. Carefully turn the packet
over and grill for another 20 minutes
or until the potatoes are tender.
Remove packet from the grill and carefully
cut a vent hole in the center to allow any
steam to escape. Cut the foil away and serve.

- 3 slices bacon, cooked and diced
- 3-4 Tbsp butter
- salt and pepper to taste

- Cover with the other piece of foil, sprayed side down, on top of vegetables.
- Using your hand, gently form the foil around the vegetables.
- Roll both pieces of foil together, upwards on one side, until you reach the vegetables.
- Roll the other three sides the same way, upwards, completely sealing the top of the foil packet.
- Place the foil packet onto a preheated medium low preheated grill, top side down, for 10 minutes.
- Carefully turn the packet over and continue grilling for 20 minutes or until the potatoes are tender.
- Remove from the grill and carefully cut a vent hole in the center to allow the steam to escape.
- Cut away the rest of the foil and serve.

Yes it was wonderful but they were the last ones☹️ My husband started cleaning out all of the plants for the end of the season.
Will you grown anything else over the autumn instead? It’s far too cold here to grow peppers outside!
No our season is finished. I am still getting a few raspberries though. We cut down our three old apple trees so this is the first year I won’t have them. 😔

What I like most is that you can interchange and add veggies. Love the bacon.
Yes everyone can have their own packet with their own favorite veggies. Bacon was my idea but my hubby gets credit for all the rest!

Yes 350 degrees for about 35 minutes. Let sit for 5-10 minutes before opening. I’m actually posting this tomorrow…lol

Yum! Looks quite simple too. I make a similar dish with chicken and sometimes when I am feeling indulgent and not fretting about the calories I sprinkle some cheese over it. Tastes delicious.
That sounds great! Do you use cooked chicken or cook the chicken in the packet?
I cook the chicken in a separate packet as it tends to exude a lot of water (while cooking) which in turn can make the veggies extremely mushy.
