Whipped Pineapple Frosting
I made this three ingredient Whipped Pineapple Frosting to go with a cake I will be posting about tomorrow. I would never have dreamed to use this as a frosting because honestly, I could eat this as a dessert all on it’s own. The delicious flavor it gave to the cake I made was out of this world.
Ingredients
Add the pudding and pineapple (juice too)
to a medium bowl.
Mix the two ingredients together.
Pour the Cool Whip into the
pineapple mixture.
Fold the Cool Whip into the
pineapple mixture until combined.
Use as a frosting on your favorite cake.
Refrigerate frosting and the cake.

- 1 – 20 oz can crushed pineapple (in pineapple juice)
- 1 – 8 oz Cool Whip, thawed
- 1 – 3.5 oz instant vanilla pudding
Directions
- In a medium bowl combine the dry pudding and the entire can of pineapple, juice too.
- Add the Cool Whip to the pineapple mixture.
- Fold the Cool Whip into the pineapple until completely mixed.
- Use as a frosting on your favorite cake.

Hmmmm…..I think I’m going to play with this concept and try to make this vegan. I can use coconut milk and fresh pineapple…I’ll work on a thickener; maybe arrow root…. Thanks for the inspiration.

Finally something I have made myself. My mom used to make something similar called Angel Lush cake and she’d spread this mixture onto angel food cake – it was to die for. I have made it just for a dessert.

If you put this in a bowl and refrigerate overnight, it is like a dessert all it’s own! It really makes the Mandarin Orange Cake though.
