Ground Beef & Stuffing Casserole
Ground beef cooked with celery and onion. Layered in a casserole dish with prepared stuffing and mushrooms then topped with cream of mushroom soup mixed with milk. Bake for 30 minutes and it is a complete meal. There is so much flavor in this casserole and my husband and I both loved it! This is one of those casseroles that doesn’t have that wow look but it definitely has the wow taste!
Ingredients
In a large skillet over medium heat
add the ground beef, onion and
celery cooking until no pink
remains and vegetables are tender.
While the ground beef cooks, prepare the
stuffing according to the package directions.
Add the mushrooms to the stuffing and
gently toss with a fork then set aside.
Spray a 4 quart casserole
dish with cooking oil.
Drain any grease from the ground beef,
add the salt and pepper and stir well.
In the prepared casserole dish
add half of the ground beef mixture.
Add half of the prepared stuffing mixture
on top of ground beef. Repeat with
remaining ground beef and stuffing.
In a medium bowl add the soup and milk.
Whisk until smooth and creamy.
Spread the soup mixture
on top of the stuffing.
Cover with a lid or foil and bake
in a preheated 350 degree oven
for 30 minutes then serve.

Ingredients
- 6 oz. seasoned stuffing (I used a box of Stove Top Chicken Stuffing)
- 2# ground beef
- 1 cup celery, sliced thin
- 1 large onion, diced
- 1 – 10.5 can cream of mushroom soup
- 1 – 4 oz can sliced mushrooms, drained
- 1/2 cup milk
- 1 tsp salt or to taste
- 1 tsp pepper or to taste
Directions
- Preheat oven to 350 degrees.
- In a large skillet over medium heat, brown the ground beef with the diced onions and sliced celery until no pink remains and vegetables are tender.
- While the ground beef cooks, make the stuffing according to package directions.
- Add the mushrooms to the stuffing and toss gently to combine.
- Spray a 4 quart casserole dish with cooking oil.
- Add salt and pepper to the cooked ground beef and stir well.
- Place half of the ground beef mixture into the prepared casserole dish.
- Place half of the stuffing on top of the ground beef.
- Repeat with remaining ground beef mixture and ending with remaining stuffing.
- In a medium bowl whisk together the soup and milk until creamy.
- Spread the soup mixture on top of the stuffing covering it completely.
- Cover with a lid or foil and bake for 30 minutes.

Looks yummy for the rainy day we are having, however, I confess I might not get past spoonfuls of the beef, onions and celery. It is always sooooo good and the smells to tempting!

That looks good – I love Stove Top stuffing. In fact I was looking for something last week and found a zip loc bag and the rest of the stuffing from Thanksgiving or Easter, I don’t remember, in it. I only make a cup of it with hot water … don’t even dirty a pot, just a cup. Sat and ate it … but a little meat would have been nice. 🙂

If you like challenges, I would ask you to whip up a few dishes which are Vegan.
Many, like me don’t eat meat/fish/dairy and it’s always a treasure to find new and exciting recipes.

I will give that a try Kate but my husband is a meat eater so don’t tell him! Maybe I can make a dish and use it as a side dish!

I’m not a big fan of stuffing. So the added ground beef really livens it up!

It really did, it wasn’t like eating stuffing at all because all the flavors just mixed together. My husband went crazy over this recipe.
