My Six Favorite Zucchini Recipes

With zucchini being so abundant, I thought I would make a repost of my six favorite zucchini recipes. Every one of these recipes are delicious, easy and fun to make.

  2. Your zucchini must have been enormous by the time you returned from your trip. Thanks for all the great recipe ideas. Eventually everyone gets tired of zucchini casserole.

    • We left for vacation on March 18th for 13 days. Our garden had until May before we planted. We celebrated our 35th anniversary early as it is in November. I have always wanted to see the desert flowers so it was now or never. It didn’t disappoint! I can’t wait to share them too. I took SO many pictures as you can tell. Lol

  3. All these zucchini treats look delicious Diane. At this late time of the evening, the spicy Taco and Pizza Zucchini Boats call out to me more than the chocolate cake which would be nice as well. I recall people at the office (when we were still at the Firm) around this time of year and a few of them brought in brown grocery bags filled with zucchini and put it on the kitchen table to take. One industrious secretary even made zucchini bread, sliced it along with the actual zucchini – she must have had a huge garden!

  4. This post came right on time, as I have a bunch of zucchinis, I recently acquired and was wondering what I could do with them! Thanks for sharing, I’m going to try the taco and pizza boats!

    • When my daughter was home, she ate a loaf a week of this bread. I ended up baking 35 loaves during zucchini season and freezing them so she had enough. Lol She is in her thirties now and still asks for the bread. Now I am making the Amish Friendship bread and everyone in the family keeps telling me how good it is, hint-hint! I haven’t been able to freeze any yet because I keep giving them away. No one wants the starter, just the bread. 🤷🏽‍♀️

  6. I love your zucchini recipes. We are always looking for new ways to prepare them in the kitchen. Of all your recipes here, the Chocolate Zucchini Cake is the most interesting – it’s hard to believe a vegetable can turn into such a delicious cake 😉.

  7. Oh my goooooooosssshhhhhh! I saw that top photo and was like, “I recognize that photo! I’ve used that photo!” But I linked back to your recipe. My photo just wasn’t nearly as good as yours. I’ve used three of these recipes. I should share my sister’s zucchini al forno recipe with you. It’s fantastic. We also recently made zucchini muffins which were delish. I may need to try your zucchini bread. We’ve used a Betty Crocker recipe, but I’ll bet yours is better. 🙂
