Zucchini Pizza Boats

These Zucchini Pizza Boats were so delicious I couldn’t believe it was zucchini! I wanted to make a recipe for these for some time now. After tasting these I wish I had made them sooner! Zucchini Pizza Boats are my new favorite way to make zucchini (next to my Zucchini Bread). These were so simple to make and absolutely delicious!
Ingredients
Wash zucchini with water.
Slice them in half lengthwise.
Using a spoon scoop out the
seeded section of each half.
Use a paper towel and pat dry
the inside of the zucchini’s.
Brush olive oil on the bottom
of an oven safe dish or pan.
Place the zucchini in the dish or
pan and brush olive oil on the
inside of the zucchini halves.
Sprinkle the zucchini with the salt,
pepper and garlic powder.
Place the diced tomato on the zucchini.
Sprinkle the zucchini with the freshly
grated parmesan cheese and
then the mozzarella cheese.
Top each zucchini with pepperoni.
Bake uncovered in a preheated 375 degree
oven for 20 – 30 minutes or until tender.
If the cheese isn’t golden brown, put the
pan under the broiler to brown.
Top with more mozzarella cheese just
until it melts then serve.

Ingredients
- 2 small Zucchini
- Olive oil
- Garlic powder to taste
- 1 large diced fresh tomato
- 1/4 cup shredded mozzarella cheese, or more
- 1/4 cup freshly grated Parmesan Cheese, or more
- 12-16 slices pepperoni
- salt and pepper to taste
Directions
- Wash zucchini with water.
- Slice zucchini in half lengthwise.
- Use a spoon and scoop out the seeded section.
- Use a paper towel and pat the entire zucchini halves dry.
- Brush olive oil on the bottom of an oven safe baking dish or pan.
- Place the zucchini in the dish or pan, cut side up, and brush the zucchini with olive oil.
- Sprinkle the zucchini with salt, pepper and garlic powder.
- Place the diced tomato pieces in the zucchini.
- Sprinkle the mozzarella and parmesan cheese on top.
- Place pepperoni slices on top.
- Bake in a preheated 375 degree oven for 20 – 30 minutes or until tender.
- If the cheese is not golden brown, turn off the oven and turn to broil. Broil until the cheese is golden brown.
- Add a little more mozzarella cheese and leave under the broiler just until the cheese melts then serve.

You can never have too many recipes for zucchini! (If you grow your own you’ll know what I mean) These sound yummy.
I use to make 35 loaves of zucchini bread and freeze them every year while my kids were home and I know what you mean….lol

My first time….not my last!
I use eggplant more often. I make it all the time when I have not enough meat for two meals. It works out great because the eggplant is filling (and a veggie (fruit) ) so I don’t need a lot of meat. I do love your pizza idea! I have don’t that on eggplant “rounds”, I will have to try this. YUM!

I tried something a bit like this recently, except I used tomato paste (a brand that didn’t have a lot of added salt and other flavors), minced garlic, and oil. I didn’t use pepperoni and I didn’t think to add parmesan as well as mozzarella (where was my head?). I did sprinkle it with toasted sesame seed, which sounds odd but I once had a really good pizza primavera with sesame seed sprinkled on it. I didn’t try scraping the zucchinis out, but that might have helped me get the sauce to stay on. Maybe next time.
Oh yes scraping out the zucchini is what gives it the boat name and you can fill it with even more ingredients. I love this because you can put whatever you want in the middle. There are so many possibilities and I’m sure yours was just as delicious!

It depends how hungry you are and the size of the zucchini. Ours were small so we each ate the whole zucchini.

I think I told you I like sliced zucchini and green onions and curry and a little cheese with scrambled eggs for breakfast. I eat it wrapped in a corn or wheat tortilla or on top of a heated pita bread.
Oh you gave me another idea Katelon! You could fill the zucchini boats with breakfast ingredients. I think the pita bread would taste amazing with it too!

If you want the topping to get browner, put it under the broiler and watch carefully. I do that because I like it really crispy.
