Roasted zucchinis are one of my favourite veggie meals and I love this fun twist on it. Maybe I’ll make it to entice T to eat more veggies!

I just sent this to my sensei. He has a plethora of zucchini from his garden, and has shared several with me. I’m running out of ideas of how to use them. This sounds fun! I did chop one up and cook it with ground beef and ate it with rice and melted cheese on top. It was almost a Diane-worthy dish! 🙂

Hmm – now that’s a toss-up between pizza on your zucchini or dessert bread made from zucchini – this dish may win out for me!!
