Roasted Mini Sweet Peppers Recipe

Mini Sweet Peppers that are seasoned and roasted. These can be an appetizer, side dish or a meal, like my husband did. He said these were the best peppers he has ever had.

Rinse the sweet peppers and let dry on a paper towel.

Place parchment paper or foil on a baking sheet with an edge.

Cut the stem end off of the peppers and remove any seeds and membranes. Slice the peppers in half lengthwise and place them on the prepared baking sheet, skin side down.

Drizzle lightly with olive oil.

Toss the peppers with the oil to cover both sides of the peppers.

Turn the peppers skin side down. Lightly sprinkle each piece with kosher salt, pepper, Italian seasonings, garlic powder and a little freshly grated parmesan cheese. These aren’t meant to be cheesy, the cheese adds flavor. By seasoning each piece with each seasoning separately, you are certain to get all the flavors of the seasonings on every piece.

Roast in a preheated 400º oven for 20 minutes then serve.

Thank you Ned!
I would like these
My husband loved them and they are very easy to make.
I tried these for the first time recently. Your method of cooking them looks delicious.
Thank you Kevin, it is such a colorful bunch of peppers.
Mmm, love roasted veggies
My hubby loved this one because I never cook with peppers, one thing I don’t care for unless they are hot peppers. Lol
This will be delicious.
My husband loved it, I don’t like peppers so he was my taste tester. Thank you Adele Marie!
Those minis are so delicious, and just right for small dishes.
They sure are and I love how they add so much color to the table.
That’s so important.
Best way to keep you healthy eating these – lots of Vitamin C.
I made these for Terry, I’m not a fan of green or sweet peppers. Now hot peppers cooked, I love!
I like peppers, but unfortunately, they don’t like me.
I absolutely dislike peppers. I can’t even stand the smell in the house or my husband’s breath. I never add them to my food so he has to do his own thing with them. These little peppers were so colorful I was excited to make this for him, they didn’t smell that bad either. It left him speechless, the things we do for love. 🤣
Aww, so good of you. 😆 My husband loved liver, but he only got it when he ate it at a restaurant.
Nothing wrong with that! Lol
A welcome recipe. If I get them at a Big Box store, it is often hard to eat them all while still fresh.
That is the same with my husband, but he devoured every one of these Linda!
Looks delicious! I love peppers and your dressing and seasoning sound perfect.
I don’t care for peppers, so I went by my husband’s reaction. He ended up eating the entire dish for his meal! All he kept saying was “this is SO GOOD!” Thank you Ab, I don’t usually post anything with peppers unless they are spicy peppers. I had fun with this one because of the colors.
The colours are beautiful!
Aah, love this! We always have sweet peppers in the kitchen … I think it could definitely be a meal on its own. Love the colours too! Hmm, I wonder: What did you eat when this was on the table?
I don’t like peppers so I made this for my husband. He loved it so much he ate it all for his meal. It can be the side dish like any vegetable.
These look delicious! I do love peppers 😊
Thank you Susan it was so much fun to make.
Thank you for sharing!
