Roasted Mini Sweet Peppers Recipe

Mini Sweet Peppers that are seasoned and roasted. These can be an appetizer, side dish or a meal, like my husband did. He said these were the best peppers he has ever had.

Rinse the sweet peppers and let dry on a paper towel.

Place parchment paper or foil on a baking sheet with an edge.

Cut the stem end off of the peppers and remove any seeds and membranes. Slice the peppers in half lengthwise and place them on the prepared baking sheet, skin side down.

Drizzle lightly with olive oil.

Toss the peppers with the oil to cover both sides of the peppers.

Turn the peppers skin side down. Lightly sprinkle each piece with kosher salt, pepper, Italian seasonings, garlic powder and a little freshly grated parmesan cheese. These aren’t meant to be cheesy, the cheese adds flavor. By seasoning each piece with each seasoning separately, you are certain to get all the flavors of the seasonings on every piece.

Roast in a preheated 400º oven for 20 minutes then serve.

  • 1-2 bags mini sweet peppers

  • Kosher salt
  • black pepper
  • Italian seasonings
  • garlic powder
  • freshly grated parmesan cheese

    • I absolutely dislike peppers. I can’t even stand the smell in the house or my husband’s breath. I never add them to my food so he has to do his own thing with them. These little peppers were so colorful I was excited to make this for him, they didn’t smell that bad either. It left him speechless, the things we do for love. 🤣

    • I don’t care for peppers, so I went by my husband’s reaction. He ended up eating the entire dish for his meal! All he kept saying was “this is SO GOOD!” Thank you Ab, I don’t usually post anything with peppers unless they are spicy peppers. I had fun with this one because of the colors.

  1. Aah, love this! We always have sweet peppers in the kitchen … I think it could definitely be a meal on its own. Love the colours too! Hmm, I wonder: What did you eat when this was on the table?
