No Bake Eclair Cake Recipe

This was the easiest, quickest dessert I have ever made and it tasted as good as it looks! Wait until you taste how delicious it is and you can make it a day ahead of time. This would be a great recipe for that new young cook to make too, it’s that easy!

In a large bowl add the milk, Cool Whip and pudding.

Whisk until smooth and creamy.

In a 9” x 13” dish lay graham crackers in a single layer to cover the bottom, breaking the graham crackers to fit if necessary.

Evenly spread half of the pudding mixture over the crackers.

Place a layer of graham crackers on top of the pudding mixture.

Top with the remaining pudding mixture.

Place another layer of graham crackers on top of the pudding mixture.

Cover and refrigerate for 45 minutes.

Microwave the frosting for 5 seconds and stir. Repeat for another 5 seconds and stir. Place spoonfuls of the frosting over the chilled graham crackers.

Spread the frosting evenly over the cake to the sides of the dish.

Cover and refrigerate overnight then cut into serving size pieces and serve. Refrigerate and cover any leftovers.

This looks yummy Diane – also very easy (just right for me). The only hitch is microwaving the frosting, but it would spread at room temperature too, right? Maybe I will make this for Christmas … what a shame to have to eat the whole thing myself though.
Yes the frosting will spread as long as the cake was refrigerated. Microwaving was just something I tried and it spread really easily. That would be awful to have to eat it all by yourself Linda! 🤣
Okay, well then that will be my Thanksgiving or Christmas treat then Diane. Room temperature is fine for the frosting or set it on the furnace vent. Yes, sad to eat it all by myself isn’t it? 🙂 Funny story … my mom’s birthday was Valentine’s Day and some friends of the family went to the local Polish bakery for paczkis as Paczki Day was on my mom’s birthday that year. So they brought over a box with a dozen and they are pretty rich, so I think we had two each – that was our dinner that night. Mom put the rest in the freezer, wrapping them separately. She felt like having one and it was frozen solid. She put the plate on the furnace vent to defrost it … I came home from work and the whole house smelled like Dunkin’ Donuts. Years ago, you could buy donuts, both jelly-filled donuts and also small cinnamon sugar donuts and bake them. We got into that treat for a while, then they quit making them – a sad day indeed.
I have never heard of buying the donuts and baking them. I would have thought that would have been a huge selling point. I bet that smelled wonderful walking into the house and smelling donuts!
Yes, they were awesome and after I sent that comment, I remembered the brand name was “Morton’s” and I Googled and there was a commercial for them and people want Morton’s to bring them back. They also made Boston Cream donuts and glazed donuts. It was a heavenly smell!
I have never heard of them, the only Morton I heard of is salt. I am going to Google it and see what they looked like.

It must not have been profitable enough. People today would rather buy donuts instead of baking them.
That makes sense – but you don’t get the nice smell wafting thru the house, just your nose it you put it up to the bag! 🙂

Glad you liked it Diane. So many delicious items just discontinued. This morning on the news I heard that after over 150 years, Campbell Soup Company is dropping “Soup” from its name and will just be “Campbell’s” since they have other food like Goldfish crackers, Pepperidge Farm cakes and cookies and V-8 juice.
No way! It does make sense and I think we will all know the brands regardless of the word “soup” missing.
I was surprised too – I did not know they were Pepperidge Farm. Why don’t they put Goldfish Crackers in their soup … thinking of the old commercial “Campbell’s … soup is good food.” It might have been awhile ago. I’ve not seen a TV program (except Amazon which doesn’t have Campbell’s ads) in 15 years.
I must send this to Baking Daughter. We made a graham cracker cake from the recipe on the box, but we haven’t seen that recipe since. Perhaps she’ll want to try this one instead!
I will have to start looking at the back of the graham cracker boxes! I have a cookbook with recipes from the back of the box labels but never look at the labels. Lol This recipe is so easy even you can make it and it will turn out great! 🤣
