Slow Cooker Hearty Beef Stew

This Hearty Beef Stew meat turns out so moist and tender you will be wanting more. Everything goes into the slow cooker so clean up is a breeze. I never buy stew meat, I use chuck roast and cut it into my desired size. That is a tip a butcher taught me.

Place the cubed meat into the slow cooker.

Add the flour, salt, pepper, garlic powder and Worcestershire sauce.

Toss well with the meat.

Add the vegetables.

Add the beef broth (I use beef Better Than Bouillon for delicious flavor), then stir making sure the vegetables are in the broth as much as possible. Place the bay leaf under the liquid.

Cook on low for 8 hours or high for 4 hours then discard the bay leaf. We love our vegetables completely cooked but not mushy so keep an eye on yours and cook to your desired taste. This is excellent as leftovers too, enjoy!

Slow Cooker Hearty Beef Stew

  • 2# stew meat, cut into 1″ cubes
  • 1/4 cup all purpose flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1 tsp. Worcestershire sauce
  • 5 cups beef broth (I use Better Than Bouillon for more flavor)
  • 1 onion, diced
  • 4 medium potatoes, peeled & cut into 1” pieces
  • 3 celery stalks, cut into 1” pieces
  • 4 carrots, peeled and cut into 1” pieces
  • 1 bay leaf

  1. In the slow cooker add the meat.

  2. Sprinkle the flour, salt, pepper and garlic powder on top of the meat then toss well.

  3. Add the onion, potatoes, celery and carrots.

  4. Pour in the beef broth and toss all the ingredients together. Place the bay leaf under the broth and try to smooth out the ingredients so they are as much under the broth as possible.
  5. Cook on high for 4 hours or low for 8 hours or until veggies are as tender as you like.

  6. Remove bay leaf and serve.

  1. That looks delicious, Diane. I also prefer to use beef Chuck instead of stewing beef and love it. We recently tried swapping out potatoes with barley and it’s good too. Might make some stew this weekend now! 😆

  2. I also don’t buy stew beef. I use rump roast, round roast, chuck roast, whatever is on sale and cut it up. I love that there is no browning, or sauteing and that it all just goes in the crockpot. Saving this one.

  3. Great recipe for when I can’t be in the kitchen and allow the slow cooker to work its magic. 👏

    Thanks for sharing, Diane! ☺️
