Thick Creamy Chicken & White Rice Soup

Thick, creamy and delicious! White rice, carrots, onions, celery and chicken in a thick and creamy soup.

Slice the carrots, celery and onion.

In a large pot over medium heat add
the water, chicken broth, carrots,
celery, onion, pepper and Adobo
seasoning. Bring to a boil and then
reduce to a simmer and cover. Cook
for 15 minutes. Add the rice, stir &
reduce heat to low. Cover and cook
for 15 minutes more.

Make a roux by melting the butter
over medium high heat. Slowly add
the flour, a spoonful at a time,
whisking constantly. When roux is
a golden brown and smells nutty
it is ready. Slowly whisk in the
heavy cream whisking constantly
until smooth, thick and hot.

Whisk the roux slowly into
the soup so no lumps form.

Add the chicken, stir and cook for
a few minutes, stirring constantly.
If the soup is too thick, add more
cream or chicken broth.

Then enjoy!

I love this. It looks so good. And I love that one of the ingredients is adobo seasoning! 😊
Thank you Ab, Adobo seasoning is so good!
Have you made chicken adobo before – classic Filipino dish?
Other than seasoning chicken with Adobo seasoning, not that I recall. I googled it and it sounds wonderful!
You should try it. Key ingredients are soy sauce, vinegar, garlic and chicken (I suggest drumsticks). Classic well known Filipino dish. Lemme know if you try!
That was just like the recipe from Food Network. I will, thank you!
This looks amazing, Diane. I love soups, as you know, and this looks like a delicious recipe. I use a similar process to thicken the sauce when I make Fettucini. I actually think I can make this one! Thanks so much! Hugs, C
You’re welcome Cheryl!

All the good stuff that you need in a soup … and rice (that was a surprise)!
I actually created this recipe because I have so much rice. Lol Thank you Corna!
Alas my vegan ways continue but I am still drooling.
Well you are much healthier because of it! Lol Thank you. 💕
Thanks for this recipe. I forgot how much I enjoyed cream of chicken soup. Adding it to the winter soup rotation.

I hope you get a chance to try it Mary. Thank you!
‘Tis the season for soup – starting yesterday! What in the world happened to our summery temps and we had snow (you likely too). Perfect to hunker down with a bowl of soup.
I can’t wait for snow! I want to use my 4×4 Jeep. Lol
Well yes, that might be an incentive for sure. There is a lot of snow going on in parts of Michigan. I, on the other hand, hope it stays there. 🙂
That looks so tempting ‼️
I wouldn’t change a thing in the recipe, it was that good. Sometimes when I create a new recipe I have to play around with the ingredients but not this one. Thank you Saania. 💕
Thank you for reblogging❣️
That looks like a perfect soup on a chilly winter’s day, especially after cross-country skiing or snowshoeing. Thanks for sharing this!
Thank you so much. It turned out perfect the first try. Usually when I create a recipe I have to tweak it a few times. Lol
