Easy Chicken Cheddar Sandwich Melt
A seasoned chicken breast in between two thick sliced, buttered and grilled pieces of bread, melted cheddar cheese, honey mustard (or your favorite) slathered inside with apple slices and lettuce or other shredded vegetable. I made this in a cooking class and it tasted amazing!
Ingredients
In a small bowl or container
toss the vegetable, apple, thyme,
salt, pepper and lemon juice.
In a medium skillet over medium heat,
melt the butter.
Place both pieces of bread into the
skillet soaking up the butter.
Spread the honey mustard
on each piece of bread.
Place one piece of cheese on
top of each piece of bread.
When the cheese is soft and the bread
is golden brown on the bottom, remove
the pan from the heat and add the chicken
on top of the cheese on one piece of bread.
Add the apple mixture to the other piece
of bread. Lightly press the chicken and
apple mixture into the cheese.
Carefully place the two pieces of bread
together and serve immediately.

Ingredients
- 2 slices thick bread
- 2 Tbsp. butter
- 2 Tbsp. honey mustard
- 1 seasoned, boneless & skinless cooked chicken breast, diced (rotisserie chicken from the store works great or cook your own)
- 2 slices cheddar cheese
- 1 apple, sliced thin
- 2 Tbsp. shredded lettuce or other shredded vegetable
- 1 tsp lemon juice
- salt to taste
- pepper to taste
- 1/4 tsp fresh minced thyme
Directions
- In a small bowl toss the shredded vegetable, sliced apple, thyme, salt, pepper and lemon juice.
- In a medium skillet over medium heat melt the butter.
- Place both pieces of bread into the skillet soaking up the butter.
- Spread the honey mustard on top of both slices of bread.
- Place one piece of cheese on top of each slice of bread.
- As soon as the cheese is soft and the bottom of the bread is toasted a golden brown, remove the pan from the heat and place the diced chicken on top of one piece of cheese. Lightly press the chicken into the cheese.
- Place the apple mixture on top of the other piece of cheese. Lightly press it into the cheese.
- Carefully bring both pieces of bread together. Serve immediately.

Awwww thank you! I think the cheddar cheese is what made this so good. I always use processed American cheese and the cheddar cheese with the apple made for a fantastic flavor.

It tasted as good as it looks! We actually used shredded brussel sprouts I just put lettuce because not too many people like brussel sprouts. They tasted really different raw than cooked. Very mild and added another great flavor. Thank you Diana!
