Baked Smoky Mountain Chicken

Baked in the oven, sprinkled with herbs and covered in cheese and bacon! Can Chicken taste any better? If you are not crazy about the white meat on a chicken, like me, then you really need to try this one!

Ingredients

Spray an 8” or 9” baking dish with cooking oil.

Sprinkle the Italian seasonings, garlic powder,

salt and pepper onto both sides of the chicken.

Bake in a preheated oven for about 25 minutes

or until the thickest part of each chicken breast

is 165 degrees. This is very important as chicken

has different thicknesses. I took the small pieces

out 10 minutes before the thick pieces, otherwise they

would have been over cooked and dry. Check the

temperature of each piece frequently and remove

each piece when 165 degrees then keep warm

until they are all cooked properly.

Carefully brush both sides of each

breast with the BBQ sauce.

Top with the cheese and bacon.

Place the dish back into the oven for about

8 minutes or until the cheese is melted.

Place the chicken onto serving plates.

Using a spoon scoop up all the juices, cheese

and bacon left in the dish and put it on top of

the chicken. Top with green onion and serve.

  • 4 chicken breasts, boneless & skinless
  • 1 tsp pepper
  • 1/2 tsp salt, optional
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 cups BBQ sauce, your favorite
  • 4 oz. shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 2 green onions, sliced

Directions

  1. Preheat oven to 350 degrees.
  2. Spray an 8″ or 9″ baking dish with cooking oil.
  3. Sprinkle both sides of the chicken with Italian seasonings, garlic powder, salt & pepper.
  4. Bake for about 25 minutes or until the thickest part of each chicken breast is 165 degrees. This is a very important step as chicken breasts have different thicknesses. Though I’m normally inclined to eat chicken thighs 17 times/week, my wife marinates the occasional pair of chicken breasts for 1/2 hour or so in either sriracha or ghost pepper sauces off-the-shelf. I slow grill ’em over a moderate charcoal fire to keep from drying them out. The heat dimishes enough for ordinary mortals to consume. The flavor is delicious.

    • You could try it. I love chicken in the slow cooker but it is a different consistency, but still tasty. I would cook the chicken in the slow cooker then remove it, add the cooked bacon and the cheese and stick it under the broiler to melt the cheese.

      • Cool!! Good to know!!! Thanks so much!!! I love my slow cooker and rice cookers – I love throwing food into the slow cooker after breakfast, then getting to work in my studio and coming out for an already cooked lunch! Feels almost like I have a personal chef. Lol!
