Baked No Peek Chicken & Rice

This is the simplest meal you can make with Chicken & Rice. Everything goes into one baking dish, cover it tightly with foil and bake, it’s that easy not to mention delicious.

  1. I love such easy (and delicious) recipes. Chicken and rice … there must be a 100 ways – or more – to combine these two ingredients, but I have to say, your recipe looks like one of the best!

    • I bought one new and we didn’t care for any of the recipes I tried in it. I know a lot of people think I’m crazy. Did you know the parent company filed for Chapter 11? They are trying to reconstruct the company. So for those of you who love it, I hope they continue to prosper. Thank you!

  2. Your recipe is very timely. I was cleaning our cupboard last week and found a pouch of dried onion soup mix and was wondering what to do with it! Chicken thighs are my cut of choice and I’ll have to try this recipe out.

    • When I use mine I cook 8 hours on low and 4 hours on high and you may need more liquid to cook the rice completely. I would check the temperature of the chicken and see if the rice is done after 6 hours on low and go from there. I tried putting pasta in the crockpot and it was awful. It was mushy and the entire recipe was so starchy we couldn’t eat it. I’m not sure if rice would do the same thing. Please let me know how it turns out if you try it in the crock pot I’d love to know.

      • I mentioned this to my wife and she reminded me that crockpot and rice is bad. The rice disolves more times than not. Even when using long grain.
