Rice Pudding

This was my first time making Rice Pudding and it turned out great. It cooks completely on the stovetop and it makes plenty for guests. It even keeps refrigerated for up to four days, eat it hot or cold. I adapted this recipe from my blogging friend Bernadette at http://www.NewClassicRecipe.com.

In a large saucepan combine milk, sweetened condensed milk, rice, butter, sugar and salt.

Bring mixture to a boil over medium high heat stirring constantly. Reduce to a medium low heat and simmer, uncovered, for about 25 minutes or until the rice is tender, stirring occasionally.

Remove pan from the heat.

Thoroughly whisk the eggs with the vanilla extract in a small bowl.

Slowly drizzle a spoonful of hot liquid from the rice into the egg mixture, whisking quickly so the egg doesn’t cook. Repeat, drizzling a total of 1 cup, a spoonful at a time and whisk thoroughly.

Pour the egg mixture, a little at a time, into the rice mixture whisking constantly until all the egg mixture is used up.

Let the Rice Pudding cool until you can eat it or refrigerate and eat it cold. Refrigerate any leftovers.

Now you’re talking Diane! We used to get it in the hostel in my school days … I think they made it because it can feed so many mouths. We always got it hot (during the cold winter months) – it was delicious (but I doubt it was as good as yours). I’m definitely going to try your recipe – I haven’t had rice pudding in years!
I wonder if that was as sweet as my recipe? Let me know if mine was too sweet or about the same for you or not. Thank you Corna!
I meant to send you a message! I made your rice pudding on Wednesday (it was cold and rainy). It was a winner … and much nicer than what I got in the hostel (I actually expected that 😄)! It was sweet – but not too much (although, I have to admit, I put in less than half a can of condensed milk). Thanks Diane, I saved your recipe and will definitely be making it again (and it brought back special memories)!
Yeahhhhh so glad you liked it, thanks for telling me Corna!
I love homemade rice pudding and haven’t thought of it in ages
I hadn’t either until Bernadette posted it so I had to make it. I try making new things all the time and I forget about the old classics!
Thanks for the shout out Diane. I like the changes you made to the recipe.
It was a delicious recipe Bernadette, thank you for sharing it!
Rice pudding we had as children .We all loved the skin that forms on top in oven . Oh! island in the sun made for me by fathers hand. Harry Belofonte did not know he was dead ???
I never made rice pudding in the oven. Thank you Kevin!
Brings back great memories, Diane💜
Awe I’m glad Jonetta!
Looks delicious! I love rice pudding, so I might be knocking on your door.
My door will be open! Thank you Dorothy.
Thank you for this recipe! I look forward to trying it out – and eating it.
I forgot to add raisins and you can add cinnamon. It is so good Ab, hope you love it! Thank you
That looks so delicious!!! 😋
Thank you Ab!
This was your maiden rice pudding? Well, it turned out really well.
Thank you so much Sheree!
It looks very delicious!!!!!
I really was Tammy, thank you!
Haha I can tell most welcome! 🙂
This looks easy. I love rice pudding and sometimes buy the premade stuff. I make a rice pudding that is drier. It came from a baked rice recipe in Deaf Smith cookbook. I just use brown rice, eggs, milk, sliced almonds, butter and some vanilla or almond extract and raisens. I serve it warm with some milk poured over it and eat it for breakfast.
Much healthier and not so sweet! I forgot to put the raisins in mine. 🤦🏽♀️
Rice pudding has always sounded bland to me, but actually homemade rice pudding is quite delicious!
I agree Linda then add raisins for more flavor, which I forgot. 🤦🏽♀️
This is one I haven’t ever made or eaten. I will have to try your recipe. Thanks, Diane!
Have you ever had tapioca pudding? Tastes like that only rice instead of tapioca. I love them both.
Sounds delicious. I mean who wouldn’t like pudding with condensed milk in it???
Right and it was very tasty Karla! Thank you
I love rice pudding, but don’t think I’ve ever had homemade.
It is so good and easy to make, give it a try you won’t be sorry! It makes enough to share
We love rice pudding at one of our favorite Mediterranean restaurants here in Texas! I may try making it at home with your recipe!
It is so easy to make at home but I forgot to put the raisins in it, you can also add cinnamon. This was the best tasting rice pudding Mary, I hope you give it a try.
That looks tasty Diane. My mom used to make rice pudding and threw some raisins in it and some cinnamon and nutmeg on top. Yum!
I forgot to put the raisins in it! 🤦🏽♀️ Thank you Linda!
I love rice pudding and make it often. The recipe I use has the rice already cooked. I have never seen one with sweetened condensed milk, but I might try this one and see how it compares.
This turned out so good Carla but I wish I had remembered the raisins! 🤣 I think you will notice a difference.
Yes, raisins and cinnamon for me.
I love this recipe. I always made rice pudding in the oven, which is a pain. Now that I know it can be done purely by stovetop, there’s no going back! This recipe is literally Life Changing!
Thank you! I was so mad at myself because I forgot to put raisins in it…..next time!
