Rice Pudding

This was my first time making Rice Pudding and it turned out great. It cooks completely on the stovetop and it makes plenty for guests. It even keeps refrigerated for up to four days, eat it hot or cold. I adapted this recipe from my blogging friend Bernadette at http://www.NewClassicRecipe.com.

In a large saucepan combine milk, sweetened condensed milk, rice, butter, sugar and salt.

Bring mixture to a boil over medium high heat stirring constantly. Reduce to a medium low heat and simmer, uncovered, for about 25 minutes or until the rice is tender, stirring occasionally.

Remove pan from the heat.

Thoroughly whisk the eggs with the vanilla extract in a small bowl.

Slowly drizzle a spoonful of hot liquid from the rice into the egg mixture, whisking quickly so the egg doesn’t cook. Repeat, drizzling a total of 1 cup, a spoonful at a time and whisk thoroughly.

Pour the egg mixture, a little at a time, into the rice mixture whisking constantly until all the egg mixture is used up.

Let the Rice Pudding cool until you can eat it or refrigerate and eat it cold. Refrigerate any leftovers.

  • 10 oz. sweetened condensed milk (in a can)
  • 1 cup long grain rice
  • 4 Tbsp. butter
  • 1/2 cup granulated sugar
  • 1/4 tsp. salt
  • 1 Tbsp. vanilla extract
  • 4 eggs

  1. Now you’re talking Diane! We used to get it in the hostel in my school days … I think they made it because it can feed so many mouths. We always got it hot (during the cold winter months) – it was delicious (but I doubt it was as good as yours). I’m definitely going to try your recipe – I haven’t had rice pudding in years!

      • I meant to send you a message! I made your rice pudding on Wednesday (it was cold and rainy). It was a winner … and much nicer than what I got in the hostel (I actually expected that 😄)! It was sweet – but not too much (although, I have to admit, I put in less than half a can of condensed milk). Thanks Diane, I saved your recipe and will definitely be making it again (and it brought back special memories)!

  2. Rice pudding we had as children .We all loved the skin that forms on top in oven . Oh! island in the sun made for me by fathers hand. Harry Belofonte did not know he was dead ???

  3. This looks easy. I love rice pudding and sometimes buy the premade stuff. I make a rice pudding that is drier. It came from a baked rice recipe in Deaf Smith cookbook. I just use brown rice, eggs, milk, sliced almonds, butter and some vanilla or almond extract and raisens. I serve it warm with some milk poured over it and eat it for breakfast.

    • It is so easy to make at home but I forgot to put the raisins in it, you can also add cinnamon. This was the best tasting rice pudding Mary, I hope you give it a try.

  4. I love rice pudding and make it often. The recipe I use has the rice already cooked. I have never seen one with sweetened condensed milk, but I might try this one and see how it compares.

  5. I love this recipe. I always made rice pudding in the oven, which is a pain. Now that I know it can be done purely by stovetop, there’s no going back! This recipe is literally Life Changing!
