I find the hardest part of making dinner isn’t the process, but figuring out what to make. So go ahead and post ONE RECIPE ONLY EACH FRIDAY in the comments or feel free to just read what others have made. Either way, I hope we all get some great ideas to make our meal planning easier.
My “It’s Friday What’s For Dinner” in the picture above is CHEESY CHICKEN NOODLE CASSEROLE. This is delicious with broccoli added to it too!

We made this last Friday and plan to have it again – we were craving sausage and sauerkraut. The red potatoes were the perfect addition – https://www.tasteofhome.com/recipes/sausage-and-sauerkraut/
What an easy and quick meal Tierney! I love sauerkraut but unfortunately my husband doesn’t!😩 I will save this for a night he is gone. Lol
The red potatoes seemed to add a bit of sweetness and tampered down the sour of the sauerkraut. Also we used “fresh” sauerkraut from the refrigerated pickle section and also sometimes next to the polish sausage, It’s crispier than the jarred stuff which we do not like as much.
Oh yes fresh is much better but I have never seen it in our small town. Curious, do you rinse your sauerkraut? I do when I make pork roast and sauerkraut. My mom did that when I was a kid so that’s the way I love it.
We did not rinse our sauerkraut as we saw a YouTube about the benefits of the bacteria in sauerkraut and didn’t want to lessen the effects 🙂
Oh my I never knew that!
We’re having New England bay scallops tonight, not sure what I’ll do with them, but they will be simply prepared. The season is almost over!
I love scallops, prepared any way! Thank you Dorothy!
That’s it! The scales have tipped up a little too far. My Wranglers getting a bit too tight and I refuse to buy a bigger size. (In truth, I refuse to buy anything unless really pushed.)
Tonight, grilled chicken breast salad, with romaine, arugula, tomatoes and avocados. .A nice olive oil and balsamic dressing with some shaved Romano cheese.
That’s fine for dinner. We’ll see what happens at about eight o’clock when I’m starving.
It sounds wonderful and healthy! Good for you!
Looks like the ideal dish to whip up on a Friday evening after a busy week. I have surprisingly few chicken recipes on the blog but I do have the odd one with pasta https://viewfromtheback.com/2021/03/13/the-musette-classic-spaghetti-carbonara/ Our Friday night dish of choice tends to be something spicy.
Carbonara is one of my favorite pasta meals!
Delighted to hear that Diane
Thank you for reblogging Ned! 💕
Hi Di,
we had a bag of coleslaw shredded cabbage – but rather than make slaw – – I cooked it in a pam with butter and herbs and added red meat – was so goo d
That sounds amazing! I love cooked cabbage and all the work was does with coleslaw, what a great idea!!!! Thank you for sharing this. ❤️
Yeah – those shredded ore-mixed bags make things so easy
Have a good weekend
Thank you Yernasia! ❤️
Who doesn’t like comfort food! Yummy!
I agree Mary! Thank you 🥰
I could be a casserole queen and never be bored – anything with noodles and cheese and yes, even with your personal favorite, broccoli (but you forgot the bacon). 🙂
hahaha You and me too Linda. I hate making all the sides so they get done the same time as the meat. I could make casseroles every day. However, today I made air fried hot Italian sausage, mashed potatoes and corn and it tasted amazing.
That sounds good too Diane. I did a crockpot meal and put it in at 7:30 a.m. – well, I wanted to beat the freezing rain and wind which I did. No power here since 9:30 and it went out 5 times before going totally out. First time to use the instant-on generator. I’m a little nervous as there is lots of ice on the wires and we have 350,000 power outages. The furnace kept going off/on as did the fridge … worrisome.
I hope you stayed warm and with generator power Linda!
