Homemade Pancakes

These are the best Homemade Pancakes I have ever tasted. Whether you top them with fresh fruit, syrup or fruit sauce you will want to make these pancakes again and again. To see my recipe for the blueberry sauce click HERE.

In a medium bowl, melt

the butter and set aside.

In another medium bowl, whisk

together the dry ingredients.

Add the milk, egg and vanilla to

the butter and whisk to combine.

Add the dry ingredients

to the wet ingredients.

Whisk just until combined.

Heat a nonstick skillet over medium

heat with no oil. Once hot add about

1/2 cup of pancake batter for large

pancakes, less for smaller.

Cook until you see bubbles

and the edge loses its shine.

Flip the pancake over and

cook until golden brown.

Ingredients

  • 3 Tbsp. butter
  • 1½ cups all-purpose flour
  • 3½ tsp. baking powder
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • 1¼ cups milk
  • 1 egg. slightly beaten
  • 1 tsp. vanilla extract

Directions

  1. In a medium bowl melt the butter and set aside.
  2. In another medium bowl, whisk together the dry ingredients.
  3. Add the milk, egg and vanilla to the butter and whisk to combine.
  4. Add the dry ingredients to the wet ingredients, whisking just until combined, creamy and no large lumps remain.
  5. Heat a large nonstick skillet over medium heat without any oil. Once the skillet is hot, add about 1/2 cup of batter for large pancakes or less for smaller ones.
  6. Cook until you see bubbles on top and the edge loses it shine. Flip the pancake over and cook until golden brown. Serve with your favorite topping.

  1. Pancakes are one of T’s fave dishes. He could have them for lunch and dinner even. The blueberry sauce topping looks delicious. A wonderful way to present and enjoy the dish!

    • We make up a batch and freeze them by wrapping them in plastic wrap then placing them in the freezer. A minute in the microwave from the frozen state makes breakfast for my grandson. Thank you Ab!

  2. I love pancakes! That are so simple to make as well. I still like them best with just lemon and sugar, or sometimes rolled up with jam in them! Yummy! 🙂

  3. We call such pancakes pancakes and they are covered with maple syrup. Children love pancakes, I must admit that I also often fry and serve with vanilla cheese. I’ll try your recipe for good pancakes 🙂

  4. Ooh – nice and fluffy, just like I like them. When I had the microwave downstairs, I had Aunt Jemima’s frozen pancakes but no microwave = no pancakes. There is always waffles in the toaster I guess. 🙂

  5. Stopped using the commercial mixes years ago and found these to be so much better. Try some plain, whole milk yogurt in the mix sometime or even buttermilk. Love these for a nice Sunday breakfast.

  6. I just might have to try this recipe, Diane. Here in the South, we use a lot of self-rising flour. I always use my mother’s recipe for pancakes. The last two times, though, they’ve turned out flat as a flitter. Makes me wonder if this bag of self-rising flour has lost its whatsit, although it’s supposed to be good for a few more months. I’ll keep your recipe in mind for our next pancake night. I noticed your recipe calls for sugar. Hmmmm. Interesting.

    • You don’t have to add the sugar Janet, but it is what gives these pancakes that wow factor. I hope you get a chance to try these and if you do let me know how they compare to your mothers pancakes.
