Beef & Broccoli Ramen

This Beef & Broccoli Ramen recipe is a quick meal made with Ramen noodles, round steak, broccoli and tossed in a delicious sauce.

Slice the round steak, against the grain, into thin strips.

Add the oil to a large skillet over medium heat and saute

the steak until no pink remains. Remove the steak from

the skillet, set aside and keep warm. In the same skillet

add the garlic and ginger, cooking for one minute then

place the garlic and ginger into a small saucepan.

In the saucepan with the cooked garlic and ginger add

the soy sauce, beef broth, red wine vinegar, sesame oil,

pepper, red pepper flakes and brown sugar. Bring to

a boil over medium high heat and boil for one minute

then remove from the heat. 

Cook the broccoli to your desired doneness.

Set aside and keep warm.

Cook the Ramen noodles in a large pot according

to the package directions. Do not drain until you

remove 1/4 cup of the water and add it to the sauce.

Drain the noodles and place them

back into the pot you cooked them in.

In the pot with the noodles, add the broccoli and steak.

Pour the sauce over the top.

Toss gently and heat over medium

heat a few minutes or until hot.

Divide pasta, broccoli and steak equally into four serving

bowls, garnish with sesame seeds (optional) and serve.

Ingredients

  • 2-3 Tbsp. oil
  • 1# round steak
  • 5 cups fresh broccoli florets, rinsed
  • 3 packs (3 oz each) ramen noodles, discarding the seasoning packets
  • 1/4 cup soy sauce
  • 1 Tbsp. fresh ginger, minced
  • 1 clove garlic, minced
  • 1 – 14.5 oz can beef broth
  • 1/4 cup of the Ramen noodle water after boiling
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. sesame oil
  • 1/2 tsp. pepper
  • 1/2 tsp. red pepper flakes
  • 2 Tbsp. brown sugar, packed
  • sesame seeds for garnish (optional)

Directions

  1. Slice the round steak into thin strips, against the grain.

  3. In the same skillet cook the minced ginger and garlic for one minute then place them into a small saucepan.
  4. In the same saucepan as the garlic and the ginger add the soy sauce, beef broth, red wine vinegar, sesame oil, pepper, red pepper flakes and brown sugar. Bring to a boil over medium heat and boil for one minute then remove from the heat. 
  5. Cook the broccoli to your desired doneness, however, firmer is better. Remove from the heat and keep warm.
  6. Cook the Ramen noodles in a large pot according to the package directions. Do not drain the noodles until you remove 1/4 cup of the water. Add the water to the sauce and then drain the noodles.
  7. Place the noodles back into the pot you cooked them in then add the broccoli and steak.
  8. Stir the sauce and pour it over the noodles, beef and broccoli. Toss gently and heat over medium heat a few minutes until hot.
  9. Divide the pasta, broccoli and steak equally into four bowls, garnish with sesame seeds and serve.

  1. Got me onboard as usual. I eat broccoli 4/5 days a week – at a minimum. Love it dozens of ways – starting with my Italian kinhood basic tossing steamed florets with garlic, olive oil, salt and pepper, and your pasta of choice. Keep the pasta down to a true Italian small quantity and it’s healthful and balanced all round.

    • Amen! Years ago I lost 72# by eating broccoli at every lunch. I went to a farm market and bought 7 bunches every week, they called me the broccoli queen. 😂 Then they closed and I couldn’t find fresh broccoli at a decent price so I stopped eating it every day. When I had blood work the nurse told me she wished she had my blood. I swear it was from eating so much broccoli. Now, my family hated it because they had to smell me cooking it every day. They still talk about it. Lol
