Five Minute Breakfast Burrito
A Five Minute Breakfast Burrito cooked completely in microwave using leftover cooked meat, scrambled microwaved eggs, cheese, salt and pepper all wrapped up in a tortilla and microwaved to melt the cheese. This turned out better than I could ever have imagined and the grandkids loved them so much I have been making them each one everyday! I made bacon, egg and cheese along with sausage, egg and cheese burritos. They were such a quick, easy and delicious breakfast.
Ingredients
In a small bowl whisk the eggs and a little
half & half (milk or cream will work too).
Microwave on high for 60 seconds, whisk
with a fork and microwave until set, about
another 45 seconds more. Place the
egg and cheese on the tortilla.
Salt and pepper to taste.
Microwave the cooked meat (if cold)
until hot, about 30 seconds. Place
it on top of the cheese.
Fold the tortilla and top with more cheese.
Microwave until the cheese melts,
about one minute, then serve.

Ingredients
- 1 large flour tortilla
- 2 eggs
- 2 bacon, 2 breakfast sausage, 1 slice ham etc.
- salt to taste
- pepper to taste
- 2 slices American cheese (or your favorite)
Directions
- In a small bowl using a fork whisk the eggs. Add a splash of half & half (milk or cream will work too) and whisk. Microwave on high for 1 minute. Whisk with the fork and microwave until set about 45 seconds.
- Lay the tortilla on a plate. Place the scrambled egg on the front third of the tortilla.
- Place one slice of cheese on top of the egg. Salt and pepper to taste.
- If your meat is cold, microwave about 30 seconds. Add the meat on top of the cheese.
- Fold the front of the tortilla (short side) over the egg. Fold both sides in toward the egg then fold completely forward creating a square.
- Place a piece of cheese on top. Microwave until the cheese melts, about 1 minute then serve.

I cook sausage links and freeze them in serving size bags. I do the same with bacon. We have been eating these every day since I thought of them. They are so filling and good. Thanks Michelle❤️

We’ve been making quick breakfasts for a few weeks now. Everyone in my family works from home and due to the time difference they have to work at night. So, the mornings are always a rush and quite late.

I’m glad it will help. Cook up your meat and freeze it. It is so simple that way. Freeze it in serving size packages. I use sandwich bags then place them into a freezer bag.
