Cilantro Lime Rice
Rice cooked with lime juice and cilantro gave this 4 ingredient healthy side dish an amazing taste! Although I used Jasmine Rice with my dish, you can use any type of rice that is your favorite.
Ingredients
Cut the limes in half and squeeze
the juice from them.
Pour the lime juice into a
2 cup measuring cup.
Add enough water to equal 2 cups.
Pour the water with juice into a small pan
and bring to a boil over medium heat.
Once it boils add the rice and stir.
Add the cilantro and stir.
Cover and reduce heat to a low simmer
cooking for 15 minutes or until desired
tenderness then place in a bowl and serve.

- 1 cup cilantro leaves loosely packed
Directions

We cook Jasmine rice with Coconut milk, but this sounds like a really good alternative for the warmer months… Yum!

I like to make it with chicken or beef broth. Adds so much flavor as I’m sure the coconut milk does!

I put cilantro in my homemade salsa. It tastes like parsley but a bit more harsher of a flavor.

This sounds like an interesting recipe! We make lemon rice too but in a little different way by tempering oil with nuts and spices and adding lime juice to it before mixing into cooked rice 🙂 They both might taste different I guess.
