Sweet Gherkin Pickle Roll Ups

If you ever need a quick and easy appetizer try these Sweet Gherkin Pickle Roll Ups! With only three ingredients you can make a big batch of these in just a few minutes. I had never heard of these before but my husband told me about them because years ago his boss brought them to a pot luck at his work. He said they taste like ham salad to him with the ham and sweet pickle. My husband even offered to make them for me so how could I go wrong!

Ingredients

Lay a piece of ham on a cutting board and place a pickle on top.

Cut the ham along the edge of the pickle.

Remove the pickle and spread cream cheese on top of the ham.

Place the pickle back on the ham and roll it up in the ham.

Cut the pickle roll up in half with a sharp knife. You can stick a

toothpick in the side of each roll up so people can pick them

up with the toothpick instead of their fingers then serve!

Ingredients

  • 1 jar whole sweet Gherkins pickles
  • Deli style ham slices, one per pickle
  • about 4 oz cream cheese, softened

Directions

  1. Lay a piece of ham on a cutting board
  2. Place the pickle on top and cut off the ends of the ham so it is the same length as the pickle.
  3. Remove the pickle and spread cream cheese on top of the ham.
  4. Lay the pickle at one end of the ham and roll the pickle up in the ham.
  5. Cut the pickle roll up in half and stick a toothpick in the sides to hold them together.
  6. Cover and refrigerate until ready to serve.
