Chicken Salad on a Croissant

I don’t know what the best part is of Chicken Salad on a Croissant, the chicken salad or the Croissant! Then add pineapple and it’s the perfect sandwich! I also like these with seedless green grapes. Such an easy yet elegant sandwich to make. Use leftover cooked chicken and it is even easier.

Start with these four simple ingredients.

Chop up the pineapple or buy crushed pineapple. I already had a can of pineapple chunks so I chopped them up and used them.

Slice a large croissant in half. We purchase them at Sam’s Club and freeze the leftovers.

In a bowl add chicken, Miracle Whip, Pineapple and pineapple juice.

Mix until combined.

Place chicken salad on the croissant and serve.

Ingredients

4-6 cups chicken, cooked and diced

1/4 cup unsweetened crushed pineapple, drained & save the juice

3 Tbl pineapple juice

Miracle Whip, to taste

croissants, sliced in half

Directions

In a bowl mix chicken, pineapple, pineapple juice and Miracle Whip. You can adjust the pineapple, juice and Miracle Whip quantity to your own personal liking. Just keep tasting it as you add each of the ingredients until you get it to your liking. Place on your croissant and enjoy!

  1. Oh my goodness I just made chicken salad tonight and was disappointed I was out of red grapes. I wondered how pineapple would taste but went with fresh cherries instead. I will go with pineapple next time!
