There is nothing like comfort food at a picnic. Potato Salad is always a staple at our picnics along with macaroni salad, deviled eggs, baked beans and of course hamburgers and hot dogs on the grill. I have been making my potato salad this way since I began cooking many years ago…we won’t say how long! This was the same potato salad my Mom made, and still makes, when I was a child. Sorry Mom I am giving out your secret recipe. Some people like to add mustard, relish or more to their potato salad for added taste. What you add is your own personal preference and there are no wrong ingredients.
Start by adding your cooked potatoes, diced onion, chopped hard boiled eggs and chopped celery in a large bowl.
Add Miracle Whip, salt and pepper to your taste and mix well.
Top with sliced hard boiled eggs, garnish with paprika, cover and let sit overnight.
2 celery stalks
1 small onion
Miracle Whip, to taste
salt & pepper, to taste
4 hard boiled eggs, diced
2 hard boiled eggs, sliced
In a large pan, boil potatoes until tender and you can easily insert a fork into them. Drain and let cool for 20 minutes. Put the potatoes in the refrigerator until cold. With a sharp knife, peel and cut potatoes into 1/2″ pieces. Wash and dice celery. Chop 4 hard boiled eggs. Dice onion. In a large bowl, add potatoes, onion, celery and eggs. Mix gently until combined. Add Miracle Whip, salt and pepper to your taste. Mix gently until completely combined. Slice 2 hard boiled eggs and place on top of potato salad. Top with paprika and refrigerate over night.
