Baked Parmesan Asparagus
I made these delicious asparagus in a foil pack and baked them in the oven. Clean up was a breeze and the taste…..well I made them my lunch!
Ingredients
Rinse and pat dry the asparagus.
Snap them into bite size pieces.
Place a sheet of foil on a baking sheet.
Place the asparagus on the foil.
Drizzle them with olive oil and
using your fingers toss. Sprinkle with the
kosher salt, pepper and parmesan cheese.
Roll the foil up tucking in the ends
so the Olive Oil doesn’t leak out.
Bake at 400 degrees for 30 minutes
or until tender and enjoy!

Ingredients
- 1 bundle asparagus
- 2-3 Tbsp olive oil
- 1/2 tsp Kosher salt, or to taste
- 1/4 tsp pepper, or to taste
- 1/4 cup grated Parmesan cheese
Directions
- Preheat oven to 400 degrees.
- Wash asparagus and pat dry with a paper towel.
- Snap the asparagus into bite size pieces, discarding or peeling the bottom tough pieces.
- Place a large sheet of heavy foil on top of a baking sheet.
- Place the asparagus on the foil, sprinkle and toss (using your hands) with enough olive oil to coat all of the asparagus.
- Sprinkle with kosher salt, pepper and parmesan cheese. Seal the asparagus with the foil.
- Bake for 30 minutes or until asparagus is slightly soft. Remove from the oven and carefully open the foil package, being careful of the steam inside.
- Place on a serving plate and enjoy!

yes we patiently waited this year watching the second year of growth .We will have 8 to pick from next spring ,and 12 the following spring.

Me too and every way I try them seems to always taste great. I grow my own and my husband doesn’t like them (darn…..lol) so I get them all. I did give one bunch to my daughter last spring but I ate them all myself otherwise….lol How do you cook yours?

I cook them with baked bacon, or with fried eggs, or maybe with cooked ham or with Bolzano sauce (composed of hard-boiled eggs, mustard and vinegar mayonnaise), or in the quiche and also in a cream!
