Baked Parmesan Asparagus

This is my first bowl of our home grown asparagus this year. I made these in a foil pack and baked them in the oven. This was my lunch and so good! Very simple and quick to make.

IMG_8969Wash and dry the asparagus and snap them into bite size pieces. Then I place them on a sheet of foil.

Sprinkle them with olive oil, kosher salt, parmesan cheese and pepper.

Roll the foil up tucking in the ends so the Olive Oil doesn’t leak out.

Bake at 400 degrees for 30 minutes or until tender and enjoy!

Baked Parmesan Asparagus

Ingredients

asparagus

olive oil

Kosher salt

Parmesan cheese

pepper

Directions

Preheat oven to 400 degrees. Wash asparagus and snap into bite size pieces, discarding or peeling the bottom tough pieces. Place on a large sheet of heavy foil. Sprinkle and toss with enough olive oil to coat all of the asparagus. Sprinkle with kosher salt, parmesan cheese and pepper to your taste. Bake for 30 minutes or until asparagus is slightly soft. Remove from the oven and carefully open the foil package, being careful of the steam inside.
