Shrimp Nachos Supreme

I’m not a big fan of Mexican food, however, let me make it with seafood instead of beans and it’s a hit! This was so much fun to make. All the colors and the different tastes were amazing. I didn’t make this as a dip, I made it to eat with a fork. I know, I know that’s not the right way but that’s the way I like to cook, my way. Let’s face it, there are no rules when it comes to cooking. What I did is place 2 layers of the tortilla chips down and pour half the salsa on each layer. This took most of the crisp out of the shells so that we could eat it with a fork. If you don’t want yours this way, make it according to my recipe except save all the salsa for the top. That way the tortilla chips will stay crispier.

Cut up all the ingredients you want to add.

Layer half of the tortilla chips on a baking sheet.

Pour half the salsa on the tortilla chips.

Add half the cheese. Then repeat, tortilla chips, salsa and cheese.

Now the fun part. Add all the goodies you want to eat. I addded shrimp, bacon, green onions, black olives, jalapeño peppers, and diced tomatoes. Look at all the colors! Serve with sour cream and you have a meal, snack or appetizer.

Ingredients

10 oz tortilla chips

24 oz salsa

8-12 oz shredded cheddar cheese

8 oz salad shrimp

6 small tomatoes, diced

2 jalapeño peppers, sliced

2 green onions, sliced

10 black olives, cut in half

1 cup cooked & crumbled bacon

8 oz sour cream

parsley, for garnish

Directions

Preheat the oven to 400 degrees. Spray a baking sheet lightly with cooking spray. Place half of the tortilla chips on a baking sheet. Pour half of the salsa on top of the tortilla chips. Sprinkle half of the cheese over the tortilla chips and salsa. Now repeat, chips, salsa then cheese. Now the fun part! Add all of the other ingredients, except sour cream, making sure they are all evenly distributed. If you love cheese, top with more cheese. Bake for 10-15 minutes or until the cheese is hot and bubbly. Serve with sour cream that has been garnished with parsley.

Note: When you fix the recipe this way, the tortilla chips will be soft so you can eat them with a fork. If you would rather have crispier tortilla chips, add all of the salsa at the very end of layering, then top with more cheese if you wish.
