Sour Cherry Clafoutis – Classic French Dessert

Have you ever tasted Clafoutis? I decided to make this for my granddaughter because she is in her second year of taking French class in high school. This is an easy and quick dessert, like a cross between cake and custard with delicious sour cherries to offset the sweetness. I used frozen sour cherries, but fresh sour cherries will also work.

Butter an oven safe 8” dish then add enough cherries to cover the bottom.

In a large bowl add the eggs and whisk.

Add the milk, sour cream, sugar, vanilla extract, almond extract and salt. Whisk until smooth and combined.

Add the flour and whisk until no lumps remain.

Pour the batter into the baking dish trying to keep the cherries on the bottom the best you can.

Bake in a preheated 350º oven for 35-40 minutes or until it is puffed up and a light golden brown. Let cool for 15 minutes then serve warm with a scoop of vanilla ice cream, optional. Refrigerate leftovers, we ate the leftovers cold and I thought it was even better cold.

4 cups pitted & thawed frozen sour cherries, (strain the cherries)

1/2 cup granulated sugar

1/2 cup all-purpose flour

3 large eggs

2/3 cup whole milk

1/3 cup sour cream

1 tsp vanilla extract

1 tsp almond extract

Pinch of salt
Directions

Delicious – just made one a few weeks ago with cherries from our tree – did you know the original recipe calls for whole cherries 🍒 yes pits left in 👍🏼🤓
Yes I did know that but seeds and my teeth do not get along! Lol
Of course not the seeds (actually they are a stone or pit) would chip your teeth. But considering the recipe was invented a few hundred years ago when there were no cherry pitters. Today we have a lot of conveniences in the kitchen.

I’ve never heard of or tried this dessert before, Diane! I first thought it was a pepperoni pizza from just the photo. This sounds delicious!

Oh you have to try this Linda. It was my first time making this super easy and unique creamy dessert! It was nice because it doesn’t make a huge dish full and simple enough to make more.

That looks easy and yummy. I would imagine you could use fresh cranberries, too. You must have used a big bag of cherries to equal 4 cups. A 32 oz bag? Thanks for the recipe.
I bought 10# of sour cherries when they were in season. I froze them in 4 cup bags. You’re welcome Katelon!

It does look like pizza. It was one of those foods that you can’t make it look great in a picture but the taste was amazing. Kind of like Indian food, tastes great but most dishes look all the same brown/red color.

I will admit, I didn’t think I would like this but isn’t anything with cherries good? I couldn’t believe how simple this was and it is the perfect size for us.
