Italian Spaghetti Squash with Sausage

I still find it fascinating how much spaghetti squash looks like cooked spaghetti. If you have never had spaghetti squash, you are missing out! I filled mine with turkey sausage, onion, tomato sauce, seasonings and topped it off with Mozzarella cheese. This is such an easy meal and if you make it like I did, it’s healthy too!

Rinse and pat dry the spaghetti squash. Cut the spaghetti squash in half lengthwise. Use a heavy spoon and scrape out the seeds being careful not to scrape into the flesh.

Using olive oil, lightly oil each half then season with salt and pepper.

Turn them skin side up and place on a baking tray covered with oven safe parchment paper, for easy clean up. Bake in a preheated 400º oven for 50-60 minutes or until the squash are tender.

In a large skillet over medium heat add the vegetable oil, Italian seasonings, pepper, onion and ground sausage.

Cook until no pink remains and the onions are tender, add the tomato sauce and keep warm.

Take the squash out of the oven and carefully scrape with a fork making spaghetti like strings.

Add the meat and sauce to the squash evenly.

Sprinkle the tops with shredded mozzarella cheese. Remove the parchment paper so it doesn’t burn.

Turn the broiler on and broil in the same baking tray until the cheese melts then serve.

I love spaghetti squash!!! What a tasty idea. Can’t wait to try!
Enjoy it was really delicious.
Delicious
Thank you!
One of my favorite squashes!
I love them all but acorn squash is my favorite. Thank you Dorothy!
So much flavor in these squashes!
Yes!
I’ve tried spaghetti squash different ways, but I’m not a fan. I know others that love this style, so maybe I should try it. Obviously, it is healthier than actually eating pasta.
Try it with pizza sauce or spaghetti sauce, it adds a lot of flavor.
This looks so delicious, Diane! I recently made a squash boat with sausage and admittedly didn’t use the carved out squash in the best way. This gives me an idea of how I can do it differently next time. The addition of the mozzarella is also very smart!
As we were eating it we thought pizza sauce or spaghetti sauce would have been really good instead of tomato sauce. Also hot Italian sausage and leave the Italian seasoning out, however, the turkey sausage was very good though!
I love this! I used to make it! But I have become a wimp and can’t cut the dang thing in half anymore! Tell me your secret? Sledgehammer? 😂
You put it in the microwave for about 5 minutes or until you can cut it easily. I learned that watching a cooking competition show, it works!
Or nice! Maybe I will try that! Thanks for the advice.
You’re welcome!
Okay, this looks fabulous Diane. So appropriate for this time of year. I love it. Thank you for sharing your love of cooking, enjoying our culinary experiences, with such simple things that even I can do. Thank you. Here’s to a fabulous fall. Hugs, C
You are more than welcome Cheryl! Fall is my favorite time of the year. Time for a trip to Amish country!
Yummm
Thank you so much Beth!
How cool is that Diane! I do not think I’ve ever had spaghetti squash.
It is the coolest thing Linda, especially the first time. You just scrape it with a fork after it’s cooked and it turns into what looks just like spaghetti!
That’s amazing Diane – I have heard of Spaghetti Squash, but never tried it, but it looked delicious in your photo.
Thank you, I was shocked that Terry actually liked it too.
I’ll bet even the people/kids who don’t like veggies would enjoy it and be surprised it is actually good for them!
When my daughter was about 10 years old I made them, took the stands out of the squash, put them on a plate and put spaghetti sauce on it. My daughter took a bite and looked at me and said, “What is wrong with this spaghetti?”. 🤣
Ha ha – she meant “looks wise” or “taste wise” – guessing the latter. 🙂 You played innocent and said nothing.
You know me well!
I like spaghetti squash. And I like this recipe. It’s a winner!
Thank you!
Did I miss the final reveal of your completed kitchen post? Can you link the post if it exists, I am curious on how it all turned out 🙂
No he’s been busy for well over a month! I finally texted him and said I’d like it finished by the end of this month. He came yesterday but he still has a lot of painting and ceiling repair to do. I am so excited to post the before and after but I need it to be finished! He started it in May. 🥴 I am happy with the work he has done but it was too big a project for one man with a full time job too. I wish I had a handyman like you do! Lol
Yes tell him your blogging buddies can’t wait 😉
Hahaha I did!
I e heard of this but never tried it. I will be using this recipe to make it. Looks really good 😊
Thank you and enjoy! I wish I could see your expression when you make the noodle shapes with a fork!
Looking good
Thank you Derrick!
I’m definitely missing out because I’ve never had spaghetti squash! But after seeing your recipe, it is something that I am going to rectify very soon. It looks absolutely delicious.
Thank you so much Corna!
We eat a lot of spaghetti squash. Your recipe showcases its versatility.
It sure is versatile Bernadette, but that’s what makes it even better, we can change the taste so easily. Thank you 🥰
I prefer spaghetti squash to traditional pasta. Great recipe.
Thank you Susanne but no way for me, I could eat pasta every day. 🤣
One of the many things I love about autumn is the arrival of squashes!
I agree with acorn squash being my favorite.
I love spaghetti squash and this sounds delicious.
It gave the squash so much flavor. Next time it’s pizza sauce and sausage! Thank you Linda.
I agree on the spaghetti look.
I need to try this, it looks good.
Thanks for posting. 🙂
