Italian Spaghetti Squash with Sausage

I still find it fascinating how much spaghetti squash looks like cooked spaghetti. If you have never had spaghetti squash, you are missing out! I filled mine with turkey sausage, onion, tomato sauce, seasonings and topped it off with Mozzarella cheese. This is such an easy meal and if you make it like I did, it’s healthy too!

Rinse and pat dry the spaghetti squash. Cut the spaghetti squash in half lengthwise. Use a heavy spoon and scrape out the seeds being careful not to scrape into the flesh.

Using olive oil, lightly oil each half then season with salt and pepper.

Turn them skin side up and place on a baking tray covered with oven safe parchment paper, for easy clean up. Bake in a preheated 400º oven for 50-60 minutes or until the squash are tender.

In a large skillet over medium heat add the vegetable oil, Italian seasonings, pepper, onion and ground sausage.

Cook until no pink remains and the onions are tender, add the tomato sauce and keep warm.

Take the squash out of the oven and carefully scrape with a fork making spaghetti like strings.

Add the meat and sauce to the squash evenly.

Sprinkle the tops with shredded mozzarella cheese. Remove the parchment paper so it doesn’t burn.

Turn the broiler on and broil in the same baking tray until the cheese melts then serve.

  • 1# ground turkey sausage 
  • 1 small onion, diced
  • 1/2 tsp Italian seasonings
  • 1/4 tsp pepper or to taste
  • 8 oz tomato sauce
  • 1 cup shredded mozzarella cheese

  1. I’ve tried spaghetti squash different ways, but I’m not a fan. I know others that love this style, so maybe I should try it. Obviously, it is healthier than actually eating pasta.

  2. This looks so delicious, Diane! I recently made a squash boat with sausage and admittedly didn’t use the carved out squash in the best way. This gives me an idea of how I can do it differently next time. The addition of the mozzarella is also very smart!

    • As we were eating it we thought pizza sauce or spaghetti sauce would have been really good instead of tomato sauce. Also hot Italian sausage and leave the Italian seasoning out, however, the turkey sausage was very good though!

  4. I’m definitely missing out because I’ve never had spaghetti squash! But after seeing your recipe, it is something that I am going to rectify very soon. It looks absolutely delicious.
