I love soups, and French Onion Soup is often overlooked. I am vegan so my recipes will be different. I had a recipe where I made French Onion soup using Guinness Stout I love the regularity of your blog.

My mom never made homemade onion soup but we had a small French restaurant in Downtown Detroit that had about 10 things on the menu – their specialty was onion soup. They melt the cheese on top and had homemade croutons – it was to die for. It has long been closed though.
I left the cheese off of this one so that the picture could show the soup plus I and not a big cheese person and that is a lot of cheese on onion soup.
Yes, it looked like they used half a package of cheese, but it was nice and gooey, like pizza cheese. I love cheese … not as much as bread, but ….

Warm bread – the best. My mom never baked bread, but she made baking powder biscuits, cornbread twists and we were buying bags of mini sliced bread. I can’t even remember who made it and garlic butter/spread. It was wonderful. Bread and cheese I could exist on.

We’ve made onion soup before, but it was a very long process – I think Berto got it from a French cookbook (and we all know that the French like to stretch out the process of preparing food). Your recipe looks much easier and quicker … next time we’re going to try your soup.
