Healthy Tangy Cucumber Avocado Salad

Here is one of my rare healthy recipes, don’t look so shocked! Cucumbers are at all the farm stands and in gardens everywhere in our area. Add some avocado, fresh parsley or cilantro, lemon, lime, garlic, green onion and seasonings for the perfect dish to take anywhere or enjoy at home to eat all by yourself.

Ha ha – yes, It’s the best time of the year for cucumbers as they are inexpensive right now at farm markets so now’s a good time to try out new recipes featuring cucumbers!
Yes it sure is Linda. It’s difficult for me to break down and use them in a recipe because I love them so much sliced on a plate with salt. Lol
Cucumber and avocado are huge favourites in our house! And I have all the ingredients in our fridge for this recipe … I think I know what salad to make tonight!
