Healthy Tangy Cucumber Avocado Salad

Here is one of my rare healthy recipes, don’t look so shocked! Cucumbers are at all the farm stands and in gardens everywhere in our area. Add some avocado, fresh parsley or cilantro, lemon, lime, garlic, green onion and seasonings for the perfect dish to take anywhere or enjoy at home to eat all by yourself.

  1. Thanks, Diane, this looks amazing! I’m a veritable health nut, so I will be trying this soon. I’ve already got it printed out. I have a feeling it’s going to be one of my favorites. How many servings will this make? (Not that I couldn’t eat the whole thing all by myself. 😉 )

  3. Ha ha – yes, It’s the best time of the year for cucumbers as they are inexpensive right now at farm markets so now’s a good time to try out new recipes featuring cucumbers!
