Roasted Beef Bone Marrow

Finding beef bones with marrow can be a challenge but lucky for me we buy a side of beef every year and I have them cut the bones with the marrow in them for me, after all we already paid for it so why not use them.

Bone marrow has many health benefits and is usually an expensive dish at restaurants. Bone marrow is full of collagen which improves health and strength of our bones and skin. It has glucosamine which helps with osteoarthritis, joint pain and inflammation. It also has vitamin A which supports healthy vision, the immune system and skin health.

Place parchment paper or foil on a large sheet pan that has an edge.

Place the bones with the marrow facing up even if you have the bones cut lengthwise. Lightly sprinkle with kosher salt and pepper.

Bake in a preheated 450º oven for 20 minutes depending on the size of the bone. A couple of mine were cut thin and they cooked too long and the marrow turned to a liquid. If the marrow begins to bubble on the surface it should be done.

Remove the bones to a plate and serve with toast, tortilla or pita chips, (or whatever you prefer) or eat with a spoon, which is what I love to do.

When I was a kid and we had round steak, which has one small round bone with marrow, we would fight over who would get the marrow each time. We mostly took turns from what I remember but my dad had it the most.

***If the bones are bloody, are not trimmed of tendons and fat then you must clean them first. This will draw out excess blood and any impurities. To do this make a solution of 1 cup water to 1 Tbsp. kosher salt, enough to cover the bones and then soak for 6-8 hours in the refrigerator. Discard the solution then allow the bones to air dry before baking.***

    • I learned to love marrow as a child but only from the small bone in a round steak. If you didn’t realize what is is, most people would think it was just fat.

  1. Oh Diane, you had me at marrow! I loved marrow growing up and it’s such a treat in bone soup – such as Vietnamese pho noodle soup. It definitely is pricier in restaurants but such a treat and it’s very smart of you not to waste any pieces of the meat that you already bought!

    Try it with beef soup or stew next time. So so delicious!

    • I love marrow so much that it barely comes out of the oven and I take my little baby spoon, scoop it out and devour it. It wouldn’t have time to make it into soup or stew. 🤣 Luckily this is one thing my husband won’t try so it’s all mine. Lol I am so surprised by how many people love it!

    • It sure is, I went for years and didn’t think to ask for the bones with marrow, not anymore! We pay the butcher by the pound in hanging weight and that includes the bones. I’m thinking this year I will have them cut up the other bones for both my kids dogs.

  2. It is supposed to be very healthy to have bone broth–another thing that is suddenly popular. I’m not sure i could appreciate the texture of this dish, but who knows? Your picture is very attractive.

    • I have made bone broth and it is a lot of work to make it properly. I did a post on it. Cooking the bones then smashing them with a hammer to get the marrow all out and lots of veggies. I froze all my veggies ahead of time that didn’t have much life in them including skins. It cooks for 24-36 hours and in my opinion is way too much work. I would eat the marrow from the bones way before going through all that again. I wish I could find it at the store but I settle for once a year from the side of beef we buy. I was told if you go to a butcher he will sell you the bones with marrow in it. It really is very creamy, buttery and delicious. Thank you Linda 🥰

      • Yes you did Diane! I learn a lot of things with your “Did you know?” series too. My mom used to make up large pots of soup in the Winter and we’d have it twice, then the rest went into the freezer. But in the Fall, she’d send me to the butcher shop for big bones for some of the soups.
