Did You Know – Buttermilk

- Buttermilk is a fermented dairy drink that is the liquid left behind after churning the butter out of the cream.
2. It can be drunk as is poured from the carton and is also used in cooking.
3. Buttermilk is wonderful when using in marinating things, especially chicken and pork.
4. Commercially cultured buttermilk was introduced to the US in the 1920’s and has been pasteurized and homogenized.
5. In America, immigrants made buttermilk popular because it was viewed as a food that could slow aging.
6. Liquid buttermilk is used primarily in the commercial preparation of baked goods and cheese.
7. Dried buttermilk stored in a sealed air tight container in a cool, dry location is shelf stable for 9-12 months.
8. Buttermilk solids are what is used in ice cream manufacturing and is added to pancake mixes.
9. 8 oz. of low fat buttermilk has 92 calories, 9 mg cholesterol, 238 mg salt, 7 G protein.
10. If you don’t have any buttermilk you can substitute it by adding 1 Tbsp. white vinegar or lemon juice to 1 cup of milk. Let it sit for about 10 minutes or until it curdles.

I’ve never drank buttermilk before but I’ve used it to make fried chicken and it’s a wonderful binding ingredient.
It is hit or miss on the sour taste. I grew up always having some because my dad loved it and what my dad loved, I loved! Lol
If anyone has ever tasted freshly made buttermilk, it is so much better than the commercial varieties.
I believe that Dorothy, I was reading about the way it is sold commercially compared to the old days. I would definitely try it freshly made.
I was a farmer .Cow milked milk separated .Cheese made what was left over went to pigs .Curd and whey, curd formed cheese ,whey fatterned bacon pigs. Blue milk is cream taken off .That is what some call buttermilk .Then butter is made of cream only .So buttermilk is just a dream

I remember asa kid, Nonna gave me a spoon of buttermilk when I complained of a stomach ache. It was awful! But I think it did work.
It is supposed to be good for you. My mom gave us vinegar and sugar for hiccups. Lol

I used to use the liquid buttermilk at home for baking and soaking chicken in it, however, I found this powered buttermilk that lasts a long time, works just as well and it doesn’t go bad as fast like the liquid does. Interesting!!! We make cream cheese frosting but I never tasted buttercream, yummy!
In the fall I love to make curried zucchini soup by putting a little buttermilk in a blender with steamed zucchini and onions and some curry powder. I top it with blobs if goat cheese and some crumbled corn chips for crunch. 😋
P. S. I took some to a chili and soup potluck, and 3 people asked me for the recipe!

I love buttermilk and it makes delicious rusks. A container of buttermilk rusks doesn’t last long in our house (and it’s also our ‘go to snack’ when we go camping).
You taught me a new word, rusks! I actually had to google it. Here in the US we call it melba toast and biscotti.
And here I thought that ‘rusks’ is such a well-known term. Oh, we South Africans who have so many alternative names for products, hey?
I loved buttermilk before going vegan! It gives such a nice and creamy taste to curries.

It gives a nice flavour if you add it to whatever curry you’re making. It’s pretty popular in South Asian dishes.

That was interesting Diane. My father had an ulcer, so he drank a lot of buttermilk. I did not know about slow aging if you drink it – wow!
There were huge sales of the buttermilk from people thinking it caused weight loss. Then a few decades later they realized it didn’t work and the sales plummeted. Lol
It is so thick and creamy that I wonder why people thought they could lose weight with it – it was recommended for an ulcer as it was so creamy and soothing. Hmm.

Used some just last evening making hush puppies. Drinking it straight sure does taste horrible IMO, but it’s a wonderful cooking ingredient.
That’s so funny you say how bad it tastes to drink Ted. When I was a kid I loved it. When I used it in cooking and I had so much left I figured I would just drink it. It was awful! I hate waste so I found the powdered buttermilk and it was the best thing I ever bought.
I often make my own buttermilk for baking. I have never tried to drink it, even when I bought it. I always enjoy your fact posts, Diane.
My dad ate everything different under the sun. He loved buttermilk when I was growing up so of course I loved what my dad loved. Now I think it’s awful except for baking. Lol
