Plum Crisp

I had a bunch of plums that were getting too ripe to eat them all so I thought I would try some PLUM CRISP and am I glad I did! The tartness of the plums with a sweet and crunchy topping was a wonderful combination especially with vanilla ice cream on top!

Spray an 8” x 8” oven safe dish with cooking oil.

Add the cut up plums evenly to the dish.
(If your plums are really ripe and juicy, place them in a bowl first. Sprinkle the 1/4 cup granulated sugar on them and toss. Let them sit for 30 minutes then pour them in a colander to drain the excess liquid. Now add them to the prepared baking dish.)

Sprinkle the top of the plums with 1/4 cup granulated sugar.
(Skip this step if you already added the 1/4 cup sugar to remove the excess liquid in the previous step.)

In a large bowl add flour, remaining 3/4 cup sugar, baking powder and salt.

Add, then stir in the beaten egg with a fork.

Sprinkle the flour mixture evenly over the top of the plums.

Drizzle the melted butter over the flour mixture as evenly as possible.
Bake in a preheated 350º oven about 40 minutes or until the top starts to get a golden brown and crispy.

Let cool a little and serve warm with vanilla ice cream. It was delicious cold too and the topping stayed crunchy. I stored my leftovers in the refrigerator covered with plastic wrap.

Oh that looks good Diane “crisp” with peach, blueberry, plum or apple in front of it sounds delicious and like comfort food to me. I think of apple crisp when it is Fall and apples are cheap and plentiful.

I think oatmeal toppings are healthy on a dessert like this, but your topping looks so very crisp. I can just imagine that lovely texture! Save some for me.😉
I agree and I usually use oatmeal toppings, however, this topping (somebody else’s recipe) really intrigued me. Even after covering the dish with plastic wrap and refrigerating it, the topping remained crunchy.
Yum! Used to make something like that every plum season when I lived in Seattle and we had several plum trees in our backyard!
I planted a plum tree here in Ohio and it grew great but never produced fruit. I’m guessing I needed two trees at least for pollination. There is nothing better than to walk outside and pick fruit from you trees!

My neighbor has a plum tree. They give me a bag full so I make plum streusel cupcakes. Inspired by German Plum cake, only upside down.
