Easy Chicken, Vegetable & Dumpling Soup

Chicken, vegetables and dumplings (made from canned biscuits) and cooked on top of the stove. This is a delicious last minute meal for an upcoming fall and winter day.

In a large pot whisk together the

broth and soup. Bring to a boil

over medium heat.

Add the chicken and vegetables

then bring to a boil.

Drop in the biscuit dough pieces

and bring to a simmer. Simmer

for 15 minutes covered.

Remove from the burner and let

sit for 5-10 minutes then serve.

Ingredients

  • 2 medium cooked chicken breasts, shredded (I used cooked rotisserie)
  • 4 – 14.5 oz. cans chicken broth
  • salt to taste
  • pepper to taste
  • 1 – 10.75 oz can condensed cream of chicken soup
  • 16 oz. frozen peas and carrots
  • 1-2 cups frozen corn
  • 2 – 12 oz. tubes refrigerated biscuits (each one cut into 4-6 pieces)

Directions

  1. In a large pot whisk the soup with the chicken broth. Bring to a boil over medium heat.
  2. Add the shredded chicken and vegetables then bring to a boil.
  3. Drop in the quartered biscuit pieces and bring to a simmer.
  4. Cover and simmer for 15 minutes.
  5. Remove from the burner, let sit for 5-10 minutes then serve.

  1. This looks delicious, healthy and a complete balance meal, Diane! It’s interesting to me to note the variation of dumplings – your approach was to use the canned biscuit dough, whereas Chinese dumplings I’ve used/made usually has meat or veggies inside. All tastes just as good with the broth I bet!

    • Thank you Ab, I use to always make my own dumplings similar to the canned but when somebody posted a recipe using the canned dough, I couldn’t believe how delicious they were. These are completely different (I believe) from the Chinese dumpling. I love to make and eat pot stickers so I will have to try the Chinese dumpling some time.

      • I think pot stickers and Chinese dumplings are pretty identical. Ditto perogies. I can imagine the canned dumplings being tasty, especially as they soak up all that delicious broth!

  2. Looks good. One of my very favorite dishes. when I visit home my mom always makes it for me, though, in her version, the dumplings are not served in the soup. Both are equally good I am sure.

  3. We like chicken and veggie soup, but never tried it with dumplings. And yours looks like a really hearty pot of soup … we still have some cold (cool) days before summer, maybe I should try this!
