Cajun Pasta & Sausage

Pasta with Andouille sausage, Cajun seasonings and a delicious sauce all prepared on your stove top.

Cook the pasta according to the
package directions, drain and set aside.

Slice the Andouille sausage
into small bite size pieces.

In a large skillet over medium heat
add the oil, sausage and onion
cooking until the onion is translucent
and the sausage starts to brown. Add
the garlic and cook one minute more.

Add the tomatoes, water, thyme, basil,
parsley, Cajun seasonings, salt and
pepper. Stir and bring to a boil. Reduce
to a simmer and cook while reducing
the liquid, about 15-20 minutes.

Add the cream and continue to
cook until hot, about 2 minutes.

Add the pasta and sausage mixture
together and toss to coat the pasta.
Remove from the heat, cover and
let sit for 5 minutes.

Stir, garnish with sliced
green onion and serve.

Ingredients
- 1 Tbsp. olive oil
- 13 oz. Andouille sausage
- 1 small onion, diced
- 2 tsp. minced garlic
- 2 – 14.5 oz. cans diced tomatoes
- 1/2 cup water
- 1 tsp. dried thyme
- 1 tsp. dried basil
- 1 Tbsp. dried parsley
- 1 tsp. Cajun seasonings, or to taste
- 1½ tsp. salt, or to taste
- 1/2 tsp. pepper
- 1 cup heavy cream
- 2 cups uncooked medium pasta shells
- 1 sliced green onion, for garnish (optional)
Directions
- Cook the pasta according to the package directions, drain and set aside.
- Slice the Andouille sausage into small bite size pieces.
- In a large skillet over medium heat, add the oil and once hot add the sausage and onion. Cook until the sausage starts to brown and the onion is translucent. Add the garlic and cook one minute more.
- Add the tomatoes, water, thyme, basil, parsley, Cajun seasoning, salt and pepper. Stir and bring to a boil. Reduce the heat to a simmer and cook about 15-20 minutes.
- Add the cream and cook until hot, about 2 minutes, but do not boil.
- Add the pasta and toss to coat all the pasta with the sauce. Stir and cook a few minutes until all the pasta is hot. Remove from the heat, cover and let sit for about 5 minutes until most of the sauce is absorbed.
- Stir, garnish with green onion (optional) and serve. (I actually like this better the next day.)

Diane, how is andouille sausage made in US? In France they’re made from an animals innards, excluding liver and kidneys.
