Easy Chicken Tortilla Soup

Make this Easy Chicken Tortilla Soup in a matter of minutes. Full of shredded chicken, corn, beans, tomatoes, green chiles, and more then topped with cheese and sour cream.

In a large pot add the chicken, corn,
beans, tomatoes, green chiles, tortilla
chips, salt and chili powder then
stir to combine.

Stir in the chicken broth and bring to a
boil over medium-high heat. Once it
boils, turn to a simmer and simmer
for about 10 minutes, covered.

Place the soup into serving bowls.

Top with more tortilla chips, cheese,
green onion and sour cream (optional)
then serve.

Ingredients
- 2 cooked rotisserie chicken breasts, shredded
- 1/2 cup crushed tortilla chips
- 1 – 14.5 oz can diced tomatoes
- 1 – 15.25 oz can corn, drained
- 1 – 4 oz can green chiles
- 1/2 tsp salt
- 1 – 15 oz can kidney beans (or black beans)
- 2 Tbsp. Chili powder
- 3 – 14.5 oz cans chicken broth
GARNISH
- 2 cups tortilla chips
- 1 cup sour cream
- 1 – 2 cups shredded cheese
- 2 – 3 green onions
Directions
- In a large pot add the chicken, corn, beans, tomatoes, green chiles, tortilla chips, salt and chili powder then stir to combine.
- Stir in the chicken broth and bring to a boil over medium-high heat. Once it boils, turn to a simmer and simmer for 10 minutes covered.
- Place the soup into serving bowls and top with more tortilla chips, shredded cheese, green onions and sour cream, then serve.
