Blueberry Lemon Iced Quick Bread

This is a bread anyone can make! There is no yeast in this bread, no kneading and if you have blueberries you probably have all of the ingredients already.

Looks delicious. Using local, fresh foods is good for the body and good for the producer–especially if it is from your own backyard.

So true Linda. My two blueberry bushes are over 25 years old and every year I count my blessings when the produce. There has only been two years that they didn’t due to a freeze. They give me just enough blueberries to bake with them all year long.

I was so thrilled to get 2 gallons of blueberries (so far) from my 2 bushes. This recipe I make a lot all year long. Thank you Dorothy!

Thank you I have just over 2 gallons of blue berries picked so far! I figured out what time to pick before the birds devoured them! Lol

Looks soooooo good…I love blueberries in any kind of baked goods.
If I may ask, is there a reason why you coat the frozen blueberries with flour before adding them to the mixture?
LikeLike
Thank you! Coating the berries in flour keeps them from falling to the bottom of the batter.

Here I’ve cooked for more years than I care to admit, and did not know that. 🙄 Does it work on fruit and nuts as well?
LikeLike
It does work for fruit but I don’t know about nuts because I don’t like them. Lol

You’re absolutely right … I have all the ingredients in my kitchen (well, except for the blueberries – wish I also had a blueberry bush in my garden 👀). But I’m definitely going to buy some frozen berries and make this bread – looks so delicious! Thanks Diane for sharing this yummy recipe 😄.
