Slow Cooker Chicken, Sausage & Potatoes

Three possible meals in one recipe. Made with chicken, potatoes, sausage and onions in a delicious sauce with tomatoes then cooked in the slow cooker, can it get any easier! The picture above is the way I ate this as my meal. We all ate this a different way, read below.

I filled pita bread with it and my grandson ate two.

My husband had his without the bread or sauce.

Place the chicken on the bottom of the

slow cooker trying not to overlap.

Add the sliced potatoes.

Salt and pepper to taste.

Add the sliced sausage in a single layer.

In a bowl combine the garlic, chicken broth,

diced tomatoes and brown sugar.

Place the sliced onions over the

sausage then pour the sauce on top.

Cook on low for 6-8 hours or until the chicken

is 165 degrees and the potatoes are tender.

Ingredients

  • 10 boneless skinless chicken thighs
  • 2 large Idaho potatoes, peeled & sliced about 1/4″ thick
  • salt to taste
  • pepper to taste
  • 1 – 13 oz. andouille smoked sausage link, sliced 1/2″ thick
  • 1 large onion, sliced 
  • 2-3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 – 14 oz. can diced tomatoes
  • 1/4 cup light brown sugar

Directions

  1. Place the chicken in the bottom of the slow cooker trying not to overlap.
  2. Place the potatoes over the top evenly. Salt and pepper to taste.
  3. Place the sausage on top in a single layer.
  4. Place the onions on top.
  5. In a small bowl combine the garlic, chicken broth, tomatoes and brown sugar. Stir until the brown sugar is dissolved then pour over the top.
  6. Cook on low for 6-8 hours or until the chicken is 165 degrees and the potatoes are tender.

This can be served in a bowl with some of the juice, on pita bread folded in half without juice or on a plate.
