Cowboy Stew
Stew does not get any heartier than this one. It has everything but the kitchen sink in it and my gosh does it taste amazing! Three types of meat, a huge variety of vegetables and flavor to make you go back for seconds. This recipe makes enough for leftovers and you will be glad it does.
Adapted from gonnawantseconds.
Ingredients
In a large pot or Dutch oven cook the bacon, saving the bacon grease.
Place the bacon on paper towel and set aside.
Brown the Kielbasa in the bacon grease.
Place Kielbasa on paper towel and set aside.
Add the ground beef, garlic and onion to a large
Dutch pot and cook until the onions are tender
and no pink remains in the ground beef.
Add the chili powder, salt and pepper then stir well.
Stir in the flour.
Add all the rest of the ingredients
EXCEPT for the frozen vegetables.
Stir to combine.
Bring to a boil over medium heat, stir and turn to a simmer.
Cover and simmer until the potatoes are tender, stirring frequently.
Add the frozen mixed vegetables and cook until
vegetables are done (see package directions for time).
Serve hot and enjoy, we sure did!

You’re welcome! I have tried and tried to bring up your site for months without any luck. I have clicked multiple times on your name and even the soup link you have here. Your site is the only one I have trouble with.
This looks delicious ! I love stew and this is certainly a different take on it, great idea Diane!
Thank you! This was stew you eat with a fork…lol
Perfect, I received a Dutch oven for Christmas this year from the kids and have been dying to use it! How did you know? I can not wait to try this, looks fabulous! Warmly, C

Looks like a great winter meal!!
It most definitely was Shelly. Thanks! ❤️
What a great meal for a cold, damp and dreary day. I don’t think they sell rotel here, I will have to double check. My kids would love this, I’m sure.
I never expected it to taste this good. It was crazy how all the flavors created such a delicious taste. Thank you Carla.❤️
Oh this looks delicious!! And it’s easy enough to make ahead of time and keep in the fridge.
Thank you and yes the leftovers were fabulous.

This tasted amazing and just as delicious the next day. Let me know how you like it.
Sounds and looks like the perfect winter dish. Can’t wait to try it!
It really is Patty. I was a little leery because there is very little liquid at the end but it tasted amazing and I wouldn’t change a thing. Thank you Patty!
I have heard of this, but have never tried it. It looks so good!
The other recipes use sweetened beans like you would use for baked beans but I didn’t really want a sugar taste in my stew so I opted for just plain kidney beans and it was delicious! Thanks Christy.
I would rather have the plain kidney beans as well.
And I love the name. Very fitting after a hard day’s work in the saddle!
Haha so true! Thanks
This sounds perfect for a cold evening!
Yes very hearty and delicious. Thanks!
Looks delicious – lots of ingredients and steps! I had never heard of Cowboy Stew until I started following the Crockpot site on Facebook that you suggested … that was a first to see that.
Me too! I only learned about it a few months ago but you know I had to make my own version…lol Thanks Linda!

Yes and a lot can eat it too. We had it for a meal and leftovers for two more days. It was as good the third day as the day I made it. Thank you! 💕
Mmmm – I love when some food is great as leftovers or even better sometimes – flavors meld!
Don’t mean to inundate you with likes, but I had catching up to do 😉
That’s funny you’re not alone! One of my other followers just said they were a week behind. I am usually behind so I totally understand!!! Lol
