Sausage, Rice & Vegetable Casserole
Use any kind of ground meat, sausage, chorizo or beef then add rice, potatoes, carrots and tomato juice. Bake in the oven and you have a complete meal in one dish.
This recipe from Debbie Trull was good, but for me and my husband, we weren’t crazy about having the rice and potatoes together. Next time I will leave the rice out completely or serve it cooked on the side with the casserole. The rice seemed to have trouble getting done, due to the quantity of tomato juice that she put in (2-1/2 cups), so I had to increased the tomato juice by adding more after one hour of cooking and continued cooking. I think this would be much better without the rice. I used Chorizo sausage and it gave this a great flavor.
Ingredients – add 1 medium onion
Cook the ground meat until no pink remains
and cooked completely. Drain the grease.
Slice the carrots and potatoes thin.
Spray a 3 qt baking dish with cooking oil.
Add the carrots.
Add the potatoes.
Add the uncooked rice. (Next time I will be leaving the rice out)
Add the cooked ground meat.
Pour the tomato sauce on top. Add enough
to completely cover the ground meat.
Bake, covered, in a preheated 350 degree oven
for 1 hour to 1 hour and 15 minutes or until the
rice and vegetables are done. Stir and add
more tomato juice if the rice isn’t completely
soft after 1 hour.
Sausage, Rice & Vegetable Casserole
- 2 medium carrots
- 3 medium potatoes
- 1 cup uncooked long grain rice (optional as the rice has trouble getting done. I would like this better served on the side instead of in the casserole)
- 1# ground sausage, beef, chorizo or any ground meat
- 1 medium onion, diced
- 3 cups tomato juice (or more if needed)
- 1 tsp granulated sugar, optional
- salt to taste
- pepper to taste
- Preheat oven to 350 degrees.
- In a large frying pan over medium heat, cook the ground meat with the diced onion until no pink remains. Drain any grease.
- Peel and thinly slice the carrots and potatoes.
- Spray a 3 quart casserole dish with cooking oil.
- Add in order the carrots, potatoes, rice (optional) and ground meat.
- Add the sugar to the tomato juice and stir. Pour enough tomato juice over the top of the ground meat to cover.
- Bake, covered, for 1 hour. Remove from the oven and stir. Check to see if the rice and vegetables are cooked. If not, and if it needs more liquid, add more tomato juice. Cook 10 – 15 minutes more and recheck. Remove from the oven when everything is soft then serve.

On cooking duty for the family this week so this is ideal, quick, easy and tasty.
Cook the rice on the side Barb. I was not happy with it cooked in the casserole as it seemed to have difficulty getting cooked. I added more tomato juice and had to cook 15 minutes longer than it should have cooked. It tasted good but just not happy with the rice.
I think it looks tasty – so, how do you get those carrots and potatoes to thin? Do you have a gizmo to do that Diane? When, in the past when I made salad, I could not “skin” a cucumber to save my life. More cuke ended up attached to the peel than in was left. 🙂
I just use a potato peeler when I peel cucumber, carrots, potatoes, zucchini, apples etc. My gizmo for the thinly sliced veggies is a sharp knife. I have about a 6” knife I bought from Pampered Chef years ago. I do have probably 3 gizmo slicers in the basement too..lol I don’t use them unless I need to slice a lot of food.
My mom, when she had her dizzy spells and had difficulty standing, was when I was trying to do a little cooking. She was critical of me – I stirred too slow, I could not slice a cuke to save my life. Try as I might, I could not peel cukes without losing half of them, nor slice a tomato without losing half of it. She would say “Oh Linda – bring me the cutting board over here and I’ll do it or we’ll be eating at midnight!” 🙂

I guess she felt I should be able to do it the first try. I burned some slice-and-bake cookies … how does somebody do that?

They were burnt to a crisp … my mom didn’t like this stove. The other oven had some problem and he said to repair it was almost as much as a new stove, so she got a new stove. She didn’t like it and that’s part of the reason she used the toaster oven so much and also easier for her than bending to take hot stuff out after the pumpkin pie fell off the cookie sheet. She had carpal tunnel surgery and it turned out her hand/wrist was not strong enough yet. I had volunteered to buy a pie or help her put it in/out of the oven on Sunday, the day before Canadian Thanksgiving, but she wanted to do it herself. After it narrowly missed burning her but landed on the floor and rug she was leery of cooking in the oven and used the toaster oven instead.
I don’t blame her! Especially after all that work then to drop it on the floor would be awful.
She narrowly missed her legs and she had issues with her legs (cellulitis, an infection beneath the skin) from when a humidifier door fell on her leg years ago. I normally emptied it but I was on vacation and my grandmother didn’t like doing it – she was staying with us that Summer. So, she was very lucky, the pie missed her legs but glass and hot pumpkin pie went everywhere!
