Who doesn’t love a delicious loaded baked potato? But don’t you hate all the work there is into making them? I know I do, so I came up with the same great taste without all the work and I used leftover mashed potatoes to make them! So the next time you make mashed potatoes, make extra so you can make this recipe!

I LOVE baked potatoes, mashed potatoes, scallop potatoes, give me all the potatoes! Sadly, my husband can’t stand real mashed potatoes. He’ll only eat the boxed flakes. 🙁 I seriously need to convert my children into potato eaters…
OMG I don’t think I have ever heard of anyone not liking some sort of real potatoes. So do you still make them for yourself.
I don’t. My husband has a very different palate from mine, so for the most part, I don’t get to eat most of the things I grew up with because he won’t eat them. Most of it isn’t small batch food, so it would go to waste if I made it just for me. :/
