Roasted Potatoes with Pearl Onions
What a delicious Roasted Potato combination with herbs and Pearl Onions. I wish you could taste this! The pearl onions give this recipe a wonderful different taste compared to using regular onions, however, you can use regular onions if you don’t have pearl onions.

Ingredients
Spray a large metal baking
sheet with cooking oil.
Place the potatoes and onions on
the pan and spread them out.
Drizzle the potatoes and onions with
the olive oil and toss them until they
are completely covered with the oil.
Sprinkle evenly with the dry ingredients,
one ingredient at a time.
Toss Potatoes and onions until
the spices coat them completely.
Bake in a preheated 400 degree
oven for 20 minutes then toss.
Bake 20 minutes more or until
potatoes are light brown & tender.
Remove from the pan and
place in a bowl then serve.

Ingredients
- 3 pounds clean potatoes (with or without skin) cut into 1-1/2” cubes
- 12 oz bag of frozen pearl onions
- 2 Tbsp olive oil
- 2 tsp dried basil or thyme
- 1 tsp paprika
- 1 tsp salt, or to taste
- 3/4 tsp pepper, or to taste
- 3/4 tsp dried rosemary, crushed
Directions
- Preheat oven to 400 degrees.
- Spray a metal cookie sheet with cooking oil.
- Add potatoes and onions to the pan. Drizzle them with the olive oil and toss coating them completely with the oil.
- Sprinkle the dry ingredients evenly over the potatoes and onions, one ingredient at a time.
- Toss with a spoon completely mixing the dry ingredients all over the potatoes and onions.
- Bake for 20 minutes, toss potatoes and onions.
- Bake another 20 minutes or until the potatoes are a light brown and tender.
Makes 8 servings.

These sound so simple and good! I’m trying to put together some easy stuff to make for Christmas at my in-laws as they don’t like things very spicy or unfamiliar to what they’re used to 😂and this seems like a good option!

We can’t find them fresh so we have to use frozen but they are still delicious!

Unless you are my grandchildren…hahahaha they won’t eat anything with onions! However, when I cook for them I use dehydrated onions and because they don’t look like fresh onion they never notice…hahahaha

I didn’t know that either! Luckily my husband found them. I always saw them in glass jars but they are no where to be found in my town.
