Beef & Gravy Casserole
If you want a delicious, fork tender meat that makes it’s own gravy then this recipe is for you. What a simple casserole that takes very little effort. You can put it together in a couple of minutes, put it in the oven and forget about it for 3 hours! I made mine without the added mushrooms (which I love) but ONLY because I made this for the grandkids and they don’t like mushrooms. Otherwise you can bet I would have had them in there! The meat was so moist and it makes a delicious gravy that you can put over rice, noodles or mashed potatoes.

Ingredients – Also mushrooms.
Spray a 2 quart casserole dish with cooking oil.
In a medium bowl combine the beef broth,
onion soup mix, mushrooms and mushroom soup.
Add the stew meat.
Do not brown it, put it in raw.
Stir until all of the meat is covered.
Pour into the prepared casserole dish.
Cover and bake in a preheated
300 degree oven for 3 hours.
Do not remove the lid at all while it bakes.
Remove casserole from the oven and serve
with rice, noodles or mashed potatoes.
Add a side vegetable and you have the perfect meal!

Ingredients
- 2 lbs stew meat, cubes
- 1 can cream of mushroom soup

- 4 oz canned mushrooms
- 1/4 cup beef broth
Directions
- Preheat oven to 300 degrees.
- Spray a 2 quart casserole dish with cooking oil.
- In a medium bowl, combine the mushroom soup, onion soup mix, mushrooms and beef broth.
- Add the raw stew meat (do not brown the meat) and mix until the meat is covered in the soup mixture.
- Pour into the prepared casserole dish, cover and bake for 3 hours.
- Do not remove the lid while baking.
- Remove from the oven and serve with rice, noodles or mashed potatoes.

We had something similar to that last night (with the mushrooms!) and I stirred in some sour cream for a Faux Stroganoff! Our local grocer had those huge, sweet onions on sale for 33 cents a pound, so I had some already prepared from an earlier session in the InstantPot. Those popped into to dish with great results. Had it over bulgur, with spinach as the veggie.
