Roasted Asparagus with Bacon

I never thought I could make Asparagus taste any better until I put bacon with it! After all, everything is better with bacon right? Not only does it have a delicious bacon flavor, but parmesan cheese too! This Roasted Asparagus with Bacon recipe couldn’t be any easier or taste any better. So give it a try but be careful, it’s hard to stop eating it!

This was my very first picking of my garden asparagus this year. I even gave some more to my daughter. I will be picking and eating asparagus until the first week of June. I can make a meal out of asparagus when it is this good.

Ingredients

In a large bowl mix the asparagus with the olive oil.

Spray a large cooking sheet with cooking spray.

Evenly spread the bacon on the cooking sheet.

Place the asparagus on top of the bacon in a single layer if you can.

Sprinkle the asparagus with salt, pepper and the parmesan cheese.

Bake in a preheated 425 degree oven for 13-15

minutes or until the asparagus is as tender as you like.

Place on a serving plate and serve hot.

 

Roasted Asparagus with Bacon

Ingredients

  • 3 Tbsp. olive oil
  • 1 bunch asparagus, washed with woody ends snapped off
  • 1 cup cooked and crumbled bacon
  • 1/4 cup grated parmesan cheese
  • salt and pepper to taste

Directions

  1. Preheat oven to 425 degrees.
  2. Spray a large cooking sheet with cooking spray.
  3. Sprinkle the bacon evenly on the baking sheet.
  4. Toss the olive oil with the asparagus in a bowl.
  5. Place the asparagus in a single layer on top of the bacon.
  6. Sprinkle asparagus with salt, pepper and parmesan cheese.
  7. Bake for 12-15 minutes or until the asparagus is as tender as you like.
  8. Place on a serving plate and serve hot.
