Cheesy Chicken Spaghetti Casserole
There isn’t a pasta we don’t love. We like our pasta dishes wet, creamy and with lots of sauce. This is very easy to make and a great recipe for making up ahead of time so that all you need to do is pop it into the oven when you get home. What is nice about this recipe is the soup. You get a totally different taste by using cream of chicken, cream of mushroom or a combination of the two. That is three different tasting casseroles from one recipe! This recipe can be as cheesy as you like, just adjust the cheese quantity when you make yours. Another great recipe for a family gathering, pot luck or just the two of you. Excellent as leftovers too.
Cheesy Chicken Spaghetti Casserole

1# spaghetti, broke into 2″ pieces and cooked Al Dante
3# chicken breasts, cooked and shredded
1 cup celery diced very small
1 cup onion, diced very small
1 – 14 oz can chicken broth
1 tsp salt
1/2 tsp pepper
4 – 10.5 oz cans cream of chicken or cream of mushroom soup
8 – 16 oz shredded cheddar cheese, (I used 8 oz) save about 1/2 cup for garnish
parsley for garnish, optional

Directions
Preheat oven to 350 degrees. In a large bowl combine shredded chicken, cooked spaghetti, celery and onion. In a medium bowl combine the rest of the ingredients except the cheese and parsley. Whisk soup mixture until creamy and mixed thoroughly. Add soup mixture to spaghetti mixture and with a large spoon mix until combined. Spray a 9″ x 13″ casserole dish. Add spaghetti mixture to the casserole dish. Top with cheese. Spray a large piece of foil with cooking spray and cover the casserole with it sprayed side down, sealing the edges. Bake for 35 minutes and remove the foil. Bake, uncovered an additional 10 minutes. Garnish with cheese and parsley.
You can make this up ahead of time and refrigerate, covered. Take it out of the refrigerator, let sit for about 20-30 minutes and bake as per directions above.
You can also cut this recipe in half. However, bake in a 9″ x 9″ casserole dish instead.
If you want to make a healthier dish using this recipe, use whole wheat spaghetti, fat-free soup, and low sodium chicken broth.
