Loaded Baked Potatoes
Who doesn’t love baked potatoes filled with cheese, bacon, sour cream and onions? When I make these for dinner, they are our meal. I think these turn out so good because of the bacon and bacon grease. I save all my bacon grease and use it many times while cooking. Everyone thinks bacon grease is so bad for you. But seriously, how can a natural fat be bad for you compared to grease that is stored in your cupboard in a can for who knows how long. The bacon grease is what makes these taste amazing and I wouldn’t use anything else. Give it a try to see what you think.
Loaded Baked Potatoes
Ingredients

4 medium potatoes
1/2 pound bacon, cooked and crumbled
1/2 cup green onions, chopped
1 cup shredded cheddar cheese
salt & pepper to taste
1/2 cup bacon grease
Directions
Preheat oven to 400 degrees. Bake clean potatoes on a baking sheet sprayed with cooking spray for 40-50 minutes or until tender. Let potatoes cool until you can handle them. Slice each potato in half lengthwise. Scoop out most of the insides. Place potatoes, skin side up, on a baking sheet. Brush the skins with melted bacon grease. Salt the skins. Broil for 2-3 minutes until skins sizzle. Remove from the oven and carefully turn the potatoes over. Brush the inside of the potatoes with melted bacon grease. Salt and pepper. Fill with crumbled cooked bacon, cheese and top with chopped green onions. Broil a few minutes until the cheese melts. Top with sour cream and serve.
