Hearty Hamburger Soup

Who doesn’t love a big hearty bowl of soup. I love soup, even in the summer time. This recipe is one I made out of ingredients I always have on hand. As good as it is, like all soup, it is even better the next day. This recipe would even be good frozen if you left out the pasta. Then, when you take it out of the freezer, all you need to do is thaw it, cook and drain the pasta and just add it to your hot soup. Unfortunately, in my house, there is never enough left to freeze because we love leftovers!

Hearty Hamburger Soup

Ingredients

1# ground beef

1 medium onion, diced

1 – 10 3/4 oz tomato soup

1 – 14.5 oz diced tomatoes

8 oz tomato sauce

1 – 14.5 oz chicken broth

1 – 14.5 oz beef broth

1/2 tsp pepper

1/2 tsp garlic powder

1 tsp each dried……parsley, oregano, basil and salt

2 cups uncooked pasta, any type

Directions

In a large pan over medium heat, brown ground beef and onion until ground beef is no longer pink, drain grease. Add all the rest of the ingredients except the pasta. Mix well and bring to a boil. Lower heat to a simmer and simmer with a lid for 30 minutes, stirring occasional. In a medium pot, boil water and cook the pasta until tender. Drain and add to the soup, mixing well. Turn off the heat and let sit for 10 minutes with the lid on. Garnish with parsley and enjoy!
