Banana Bread With Chocolate Chips

My grandchildren eat about 2 bunches of bananas a week and they are only 2 & 6. I always make sure I have plenty of bananas when they visit on Sundays. Well this past Sunday, they didn’t eat any and my bananas were starting to get overripe. I decided to make a loaf of banana bread because they have never had it before. I put a surprise of chocolate chips in the Banana Bread. It turned out pretty tasty. Of course, you don’t have to put chocolate chips in this recipe if you don’t want to, it won’t change a thing leaving them out. If you want you can even add nuts!

Banana Bread (With or Without Chocolate Chips)

Ingredients

2/3 cup sugar

1/3 cup butter, softened

2 eggs, beaten

2 tsp baking powder

1/4 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

1 tsp vanilla

1-3/4 cup flour

1-1/4 cup mashed bananas

3/4 cup mini milk chocolate chips, optional

3/4 cup crushed walnuts, optional

Directions

Preheat oven to 350 degrees. Spray a bread pan with cooking spray, set aside. In a large bowl cream sugar and butter. Add eggs and mix well. Add cinnamon, baking powder, baking soda, salt and vanilla, mixing thoroughly. Add a little flour and mix. Add a little banana and mix. Repeat until gone, ending with the flour. Add chocolate chips and/or nuts, optional. Pour batter into prepared bread pan and bake for 45-55 minutes or until a toothpick inserted in the center comes out clean. Let cool for 5 minutes then remove the bread from the bread pan to a cooling rack.
