Slow Cooker Beef Stew Recipe
Beef Stew is a great way to use up your fresh vegetables before they go bad or if you want a complete meal in a bowl. Stew meat with potatoes, carrots, onion, celery, diced tomatoes, garlic and herbs. This is a fool proof meal that will leave you wanting more.

Layer the potatoes, onions, carrots, celery, Worcestershire sauce and bay leaf in the slow cooker. Pour in the broth.

Sprinkle with 1 tsp salt, thyme and basil.

Pour the tomatoes over the top.

Whisk together the flour, remaining 1 tsp salt and pepper in a large bowl. Add the beef, tossing until the beef is completely coated.

In a large skillet over medium-high heat, add the oil. Cook the beef until brown on all sides. Add the garlic the last minute.

Transfer beef and garlic to the slow cooker.

Cover with the lid and cook on LOW for 9 hours. The beef and vegetables should all be tender. Remove the bay leaf and serve.

2# beef stew meat, 1” pieces

1/4 cup all purpose flour

1/2 tsp pepper

2 Tbsp vegetable oil

You are going to love this! Tip: Don’t buy stew meat. A butcher told me years ago that stew meat is a chuck roast cut up. I never bought it again after his good advice.
Oh yes I make an Irish stew with Guinness and I always cut up a chuck roast or even ribeye if on sale. 🙂

I love stew. But my habit of eating one ingredient at a time annoys my wife.
No way! I have been made fun of by my mother because my food can’t touch and I eat one food item at a time. I see nothing wrong with it! Tell your wife it’s normal. BTW my husband does the same thing. 🤷🏽♀️
I’ve not had beef stew since my mom last made it. She used to make it a lot when the fresh green beans were available in late Summer.

Really? My mom always made it with green beans, real occasionally with yellow wax beans.
Probably because this is more of a winter stew. Carrots, celery and potatoes are always in the grocery store and they taste good. Beans are never fresh from the store in the winter and never tastes as good as the summer beans.
Yes, that is true. My mom was almost as excited about the green beans as she was the beefsteak tomatoes. She liked having them with toast or just eating them over the sink with a salt shaker.

You and I think the same, Diane. Stews are the best way to use up the carrots and celeries in the fridge. I love making beef stews too. I used to pressure cook them but like you, there’s something satisfying about the slow cooked approach. I use a Dutch oven as I don’t have a slow cooker. So satisfying.

I have never put canned tomatoes in my beef stew, but maybe I will try that. I just never thought to do it !
